Most important thing is some containers respawn. That means anything in them is deleted and they are restocked with their default stuff (if any). Usually this happens about once a week in-game time. So if you want to test a container you need to put something in it and wait at least 1 in-game week. Usually that's good enough.
But also keep in mind that NPCs will take stuff from containers if they want to. Usually stuff that's far away from any towns etc where no NPC has any business being is safe, but you never know if someone might wander by, especially if it's outdoors. NPCs need food and water and will take it where they find it, and especially if they get attacked they will definitely run to the nearest container and take guns/etc out of it. Some NPCs may just be kleptos, too...
Also, Veronica apparently has a thing for Abraxo Cleaner because every time she sees some she has to snag it. Must be her domestic instincts?? harrr...

So, I've gotten the NCR to like me, and I've "joined" BoS, but I haven't gone to see Mr. House yet. I know that one of the big choices I have is whether to work with him or betray him w/ Yes Man. My main question is how that affects my relationship with the NCR or other factions? It's hard to make decisions in this game. I'm planning on siding with the NCR and getting the BoS to agree to a truce. Also getting the Boomers to help. I don't know how the Strip plays into that though.

I didn't get the BoS / NCR truce when I did it but House was unbendable on the point that you have to destroy the Hidden Valley bunker. Also if you complete enough of House's quests, you can't work for the NCR anymore.

I ran out of ammo and had to finish beating them with a bat. But I killed all of them.
Play on very very hard and play hardcore and have fun dying when someone sneezes at you
Yeah, Hard/Hardcore is the perfect combination. Not too bullshit and just difficult/pressing enough. VATs not being god mode in NV helps a lot with this. The only complaint I have is that companions cannot handle any difficulty about normal on hardcore. They go down like bitches to the first melee enemy that gets a chunk out of them. I got so frustrated I actually reduced the difficulty to normal and I still have trouble keeping them alive in my various travels. I had to leave Veronica and ED-E at the start of the central tower in Helios One because they would die in seconds.

This happened to me as well, I found a camp of dead fiends and turned to leave and he just popped up, initiated all his old dialog and sat there
talked again and companion wheel came up

luckily I outwitted them by putting on a legion uniform before they talked to me
