My boyfriend and I have recently switched to a vegetarian diet. His birthday is January 6th and I want to cook him a nice meal. In the past I've just cooked him a nice steak with varied accompanying dishes but I'm having trouble finding a fancy non-meat equivalent meal. Any suggestions? Any difficulty level is welcome.
How do you all feel about ethnic food? Thai and Indian dishes are wonderful if you're looking for something flavorful with a lot of flair in the presentation. If you're looking for something more familiar, don't discount Italian food--my husband's go-to romantic dish is homemade fettucine alfredo.

fantastic book, can't recommend it enough, none of the recipes have steered me wrong
