National Treasure(s) - remember that reality show that came out around the same time that was pretty much the same thing? I loved these movies.
Wickerman - golden. everyone has already commented on this.
Bad Lieutenant - some of his best work. This film was made for him. I highly recommend it. It is amazing and confusing; The two things Nic Cage is best at being.
Bringing out the Dead - this movie is actually really amazingly good. Really shows his range as an actor. I'm not sure if it's a fluke that he does so well in some movies and so horrendously (awesomely) bad in others, but it just makes me think that Nic Cage is probably an acting-genius and knows precisely what he is doing depending on the prospective quality of the film.
Adaptation - another amazing performance.
Kick Ass - he's got a strange way of being absolutely creepy while at the same time being earnest and innocent. Nicolas Cage.
Matchstick Men - this was also a good movie.

My fave movie of his is probably Matchstick Men / Raising Arizona. Gonna pick up Bad Lieutenant, that looks pretty bad ass.

The Rock is the best movie with Nic Cage in it but it is a rare case where he does not dominate the screen. Everyone in that movie is completely upstaged by the absolute brilliant performance of Sir Ed Harris, Esq. as General Francis X. Hummel.
But then that is one of my favorite individual performances ever.
