A simple marketing maneuver.
Bravo has his shirts that he gives to his 10th Planet (nogi) guys. Couture's gym started colored belts to denote wrestling rank; I don't know if they're still doing this. Even Sambo Steve down in New York has introduced colored belts to his sambo students. Sambo has two belt colors, red and blue but normally does not indicate rank with belts.
It gives gym customers an attainable sense of accomplishment. And it helps spread word around. Colored belts are one of the most recognizable aspects of martial arts to outsiders.

Those are specific disciplines though. How do you have a belt for "ultimate fighting"?
Or rather, don't we already have belts for ultimate fighting? GSP has one, Anderson has one, JDS has one, etc.
