One thing I did to kick start my weight loss was calorie tracking (not counting) at the start of my weight loss adventure.

It showed how some days I made great decisions and some days I don't.
For example, a frozen jimmy dean french toast sandwich with turkey sausage and an ice tea sounds like a horrible breakfast but it's very much better than the egg mcmuffin style sandwich and pepsi I had been doing. Making substitutions and adding exercise to balance out calories I am doing pretty good at losing 41 pounds (down 13 so far).

So I guess what I am suggesting is take a look at your average diet over a week before jumping into anything. That way you can understand what areas could use improvement before you scattershot approach. I had to cut sugar quite a bit and I probably could use more fiber so I am working towards that.

I really like MyPlate for calorie tracking.

Just like you I've found this kind of thing works great to get a realistic picture of what I'm doing to myself. It helped me finally comprehend how absurdly high in calories bagels are despite whole wheat bagels seeming like a fine breakfast option, as well as plenty of other surprises. Another example: I was totally amazed that in my buffalo wing indulgences, the bleu cheese I was generously applying was many times more calorie-laden than the deep fried wings themselves.

There are other sites, too, and some people prefer abstracted counters like Weight Watcher points, but some kind of food tracker could really help you, Beltaine, in getting a better picture of where you stand and where you can (or must) make changes to your eating habits.
