Personally, I don't like the whole (s6 spoiler)
Tattoo to keep out demon possession because, like you said, literally every fucking hunter they meet up with should have that tattoo shortly after they meet them.
Oh no! The asshole on the Winchester monsterhunter team is actually a demon! Wait...their grandpa had the secret to curing vampirism but didn't think to use Sam's tattoo to protect his family?
The show has good mythology, but holy crap the writing can be just ass at times. Like how they could have made the pyschotic vampire killer guy really believable and sympathetic, but they instead made him become just total nutso. The boys have been to hell and back (literally) for each other and yet they will lie about the littlest shit because they want to avoid minor disapproval from the other.
Sometimes angels can move faster than the speed of light. Sometimes they can't move fast enough to avoid an attack that is telegraphed by a silly quip.
There must be a commandment in the show that no character can be stabbed in the back unless the person doing the stabbing make a Commando-esque comment.
I guess sarcastic quips magically bind people!

the demon possession thing could have easily been handled without dumb tattoos, too
just say "oh no demon can enter Sam now that he's been tapped as Michael's vessel, he's too pure, and, uh, no demon would dare possess what is Lucifer's by right so Sam's safe too"

you and raijin are totally right, for sure, but i suspect there'd be almost no way to accomplish a show with this much (i guess unanticipated, they didn't know it'd be a huge success) scope / sperglord fans without tons of serious inconsistencies
not to just hand-wave away the writing problems but it almost feels inherent in the genre

at least for me i'm not saying supernatural is diminished significantly by these things, just that i noticed them and thought about them while watchin' people get their shit absolutely ruined by ghosts

Obviously this is a spoiler if you haven't been caught up that far.
Castiel tracked down a demon working for Crowley, named Ellsworth. He steps in and takes out two of Ells's men, and then moves for Ellsworth, who immediately bails on his host.
Castiel reaches into the black smoke before he finish escaping, shoves him back into the body, then kills him.
Do they ever use "Cristo" to reveal a demon other than that one airplane episode? Ever since then, it's all just, "Oh here, have a drink...of HOLY WATER."

It's probably for the best, though, since with so many demon antagonists throughout the show it'd trivialize having to find them.
When, say, you take a group of folks and discover that ONE of them is possessed, it makes things a lot less tense and interesting when you can flush them out of hiding just by uttering one word.
