Yeah, we made apple juice over the weekend, and it is like two to three times as sweet as store apple juice.

There's a good chance the store bought juices are actually derived from concentrates (practically all orange juice is like this), which is probably why the fresh ones are sweeter.
"Simply Orange" has a different problem altogether because of how they preserve it, but I feel like it's the better of the store juices.
The Odwalla one is best but $$$.

I'm actually fine there, but we were just selling merch at conventions and never made any real money doing it.
My big questions are inventory, shipping, getting my name out there (I've got some ideas there), insurance, etsy or are there better places, etc.
Etsy is probably a good place to start, I have a shop on Storenvy but they don't have as big a market as etsy. Depending on your inventory size you could go super clean with a big cartel store.
Ship station is good for most of the stuff you're talking about.
As far as getting the word out there, be active on social media, document the process and people and story, etc.
Buy ads, I've had good luck with pinterest, a little with instagram and absolute dogs hit with Facebook (except for 1 that exploded and was amazing)
