Fishing - General advice

Alright, so some of my friends and I are going down to Port Orange (Florida) on Sunday morning to do some fishing. It's something we've all talked about doing for a while even though we're all rather inexperienced. I haven't been fishing since I was like...eight years old, so yes, I'm very rusty on a few things.
A couple of things:
- We are doing this under the Port Orange bridge, so saltwater fishing. What are some of the best baits to use? Not trying to catch any type in particular, just doing it for fun, sport and relaxation.
- Since I would like to hurt said fish as little as possible, are barbless hooks really better? Are they more unreliable when it actually comes to catching fish?
- The proper way to unhook a fish? I've heard it said to never stick your fingers into any fish's mouth (except for a bass), I'll probably need some pliers, correct?
