Jewcar - Traditional yakiniku is really good, as is shabushabu. I don't know if there are any good yakiniku or shabushabu places in Seattle, but I'll look around. A good shabushabu is wonderful, especially with the cold-wet winters we get here.

Some cattle ranchers in Texas (I think) purchased some of the cows from Kobe, Japan and brought them over and started selling them as American Kobe beef. It doesn't have near the marbling of real Kobe beef or anything like that.
Wagyu beef is really good too, though, considering how far the Kobe has to travel. The only place outside of Japan that I'm willing to get Kobe beef in is Hawai'i, 'cause it's close enough for overnight shipping from Japan to be somewhat reasonable price-wise. Otherwise, I get Wagyu.
