    Nerd, if we compare the European past to some of the poorer and most deprived parts of the world it's actually surprising how balanced their diet is in those parts - they get a wide selection of amino acid diversity despite only eating a few different things. So while the west's diet is better it's not as much better as you'd think it would be. There's a comparatively small difference, compared to the earning/standard of living gap that exists.

    therefore it was very useful to control the salt supply

    hence why people weren't allowed to make their own salt
