Yeah I think that sort of thing is why I never made it all the way through Se7en.
I've seen tv edits of Se7ven aired on FOX or whatever way back when and thinking back on it, they always cut that case out of the film and leave in every other terribly disgusting scene.
Is the gluttony case really any less disturbing or rape-y? I don't think so.
How do they cut out Lust? The tv edits I've seen they have showed nearly everything (except when the detectives are shown the photo of the strap-on it is very briefly on screen).
Also I would say the Lust torture easily eclipses most of the other tortures. That scene throws a lot at the audience besides simply having a torture happening. The interrogation with the victim is pretty awful to have to watch.
