Yeah I just made a huge batch of spanish rice with sauteed peppers and mushrooms, and some citrus chicken to top it off. The pot lasted for 4 meals, but ran dry last night. Tomorrow it's going to be a big pot of cream of chicken/mushroom soup, more chicken, potatoes, carrots, and celery. Probably more mushrooms too. I can make enough of that to last a couple nights.
