I know for a fact that you run into the Chevin at some point in the Old Republic, which, judging by what you consider to be 'human-like' are still pretty out there. Oh, and you meet some Gran too and there are some Kubaz as well. And I'm pretty sure that's just in the beginning areas.
I mean you can argue those all look fairly human-like, but I mean Jabba was a pretty big part of the movies, and Hutts are giant slugs with arms and a humanish head.
