In your turn you have to first sink a red ball, then you can shoot for any other ball on the table. The colours are retrieved back onto the table until all reds are down. Then when the reds are down you shoot for the coloured balls in order of their score.
To get 147, a perfect break, you have to sink every single red ball in one turn, sinking the black ball between each red ball, then each coloured ball in order.
That's 22 balls, in a row, in a specific order.

Best guess is that they're referring to the club they performed in New Jersey 30 years ago. I'm not really a Beastie Boys expert, though.
