    personally I think a lot of it is the cliche of the "good girl" and the "bad boy" getting together is what made people think it would happen

    like a beauty and the beast thing

    Actually Iroh sort of sacrifices himself.
    You can tell by Azula's eyes that she's about to take out Toph and Toph's not prepared. Iroh can tell too, so he deliberately moves first, prompting Azula to attack him instead. Keep in mind this was after Toph's teatime with Iroh.
