I didn't enjoy the Boiling Rock massively. Prison break stuff was less intriguing than further Fire Nation travels would have been for me.
Which isn't to say it wasn't rad anyway.

The actual dragon dance was probably my favorite part about that episode. Aang and Zuko preforming the moves in the foreground and the dragons curiously mimicking, although it's really the other way around, in the background.

Also, while I'm rewatching Avatar, damn, I'd forgotten how good the fight scenes in this are.
I'm kind of late on this, but I wanted to say how much I love the Season 1 fight between Zuko and Zhao at the North Pole. Not only was the bending cool, but the way that colour is used (or not used) in that scene trips me out every time.
