Is cold smoking not a thing for you guys? The way I do it is you cure whatever meat you're using (for me it's pig and trout, before all my trout died) and then you stick it in this little box. That box has a pipe running into from my hot smoker and the smoke from the hot smoker gets all up on the meat in the cold smoker, giving it that smoky flavour without cooking the meat
