The other night, I made pork medallions in a chili-maple glaze. Take a pork loin, cut it into 1 inch thick medallions, rub them on both sides with some garlic salt, chili powder, and dried chipotle pepper.
Meanwhile, mix together 2 tablespoons of pure maple syrup, 1 tablespoon of apple cider vinegar, and 1 cup of apple cider.
Add a little bit of oil to a pan, and heat it up. Fry the pork on high, turning at least once, until it's browned on both sides, and firm to the touch (maybe 6 minutes).
Add the glaze, and let the pork simmer until the glaze is dark and thick. It's absolutely delicious.
For a side dish, get 2 ears of corn, and cut off the kernels, and toss the cobs. Combine the kernels in a bowl with 1 can of black beans (drained) a finely chopped red bell pepper, a finely chopped jalapeño pepper, a crushed clove of garlic, some cilantro, and a little bit of lime juice.
Sautee all of this in a little bit of olive oil for about 5 minutes, stirring regularly. When it's almost done (when the peppers start to get a little soft) add a few dashes of chili powder. Serve immediately.

I've been working on a stir-fry recipe for a month or two, and it's pretty simple, but I think I've got it down just the way I like.
Chop up 1 boneless, skinless chicken breast into bite-sized pieces. Put the pieces in a bowl, add some soy sauce, finely chopped garlic, balsamic vinegar, chipotle pepper, black pepper, and powdered ginger. Toss it all together with your hands, until the chicken is evenly coated, and set aside.
For the sauce, combine some soy sauce, water, sesame oil, dried ginger, honey, corn starch, balsamic vinegar, and apple cider vinegar.
Heat some oil in a pan on high, add the chicken, and cook until it's nice and crispy and brown. Drain out the oil and excess marinade. Add whatever vegetables you like, and let those sautee until they're cooked to your taste. Add the sauce, and cook until the cornstarch breaks down (the sauce will become thicker and less cloudy).
Serve on some ramen noodles that have been cooked with the seasoning, and then drained.
Ethiopian food is the shit, whatever that weird pan bread they use instead of utensils is freaking amazing, its got a tangy fermented flavor to it.
Crossbuster, try tossing a little housin in for a touch of sweetness which will help coat the dish and promote browning in the chicken... it sounds delicious regardless.
and ditch the dried ginger, the fresh stuff is so cheap its ridiculous.
