This is quite possibly going to be the best spring ever. Just moved into a new flat, right in the middle of town, walking distance from parks, downtown, and everything else that matters. Just got a new dog, a 1yr old Collie that is the smartest, most easily trained dog I've ever had, and who is the most effective way to meet cute girls I have ever seen.

It's also time to finally use my shiny new 4-burner stainless steel barbeque. I'm a decent cook, but I'm new to grilling. Tell me how to make delicious meals with meat and fire, SE++

    You really should ask in H/A. Plenty o' cooking advise there.
    Step 1 to making good food: starting with good ingredients. Crap in = crap out.
    Step 2: decide what you want it to taste like. Don't have it taste like 8 different things. Making burgers? You want it to taste like beef. By good quality meat, season simply, apply to heat.
    Step 3 (as previously mentioned): season more, cook less. This does not mean use every seasoning you have. Salt and pepper are enough for most grilling type foods, but use more than you would normally think you should. Get the grill nice and hot, and put it on there. Don't move it around, leave it for a couple of minutes (you'll have to experiment to find out exactly how long), flip it, another couple of minutes, and pull it off.
    Finally, if it's done on the grill, it's overdone on the plate. Carryover heat, the meat (or whatever) is still cooking as you're readying to eat. Once you've figured out how rare or well done you like it, start pulling it off a minute or so before it gets there.
    That's all that comes to mind. Maybe try watching Food Network.

    I thought about that, but then I was reading a thread that magically turned into a discussion of the finer points of jam making, and decided I was more interested in SE++'s opinion on such things, as SE++'s opinion tends to be more interesting. Also, I've barely set foot in H/A, and would feel out of place there. Folks seem too nice.

    Sidenote: no offense to the jam-makers among us, but mason jars are meant for homemade salsa.

    Marinating steak is totally unnecessary if you have a nice cut. Some dry seasoning is as far as I'd go.

    if you have a quality steak, yes
    why would you buy a really nice t-bone or porterhouse and then just put so much shit on it that you can barely taste how good it is anymore?
    like I said, fine for cheaper steaks that need some tenderizing, but horribly stupid for a fine steak

    A lot of people will say 'Oh, something I can buy in the store is good enough'. Fuck them. FUCK THEM!. Your sauce/rub needs to be made from the heart. Preferably ahead of time. Only the worst people decide on a Friday night to whip something up for Saturday.
