it's all fusion fancy like and i didn't expect big portions but i ordered the spicy pork ribs (about $20, standard fare for korean) and they fucking brought me TWO huge racks both just smothered in the delicious spicy sauce
the place i go to still hasn't grasped english so i make do with pointing and then gesturing the number i want

the baked ones are "cha siu chan bao" in Cantonese (or cha shao can bao in proper Mandarin pinyin) or "cha siu sou" (cha chao sou), depending on which of the two typical types you got

Thai goes without saying
Vietnamese is fucking great as hell, their shit tends to be tangy without spicy and it so light and doesn't involve lots of oils
Indonesian is its own brand of spicy and holy fuck the way they do their fish is unfuckingbeatable if you like spicy
Singaporean is a mish-mash of Malaysian, Indian, Indonesian and Hokkien goodness

siu long bow (or xiao long bao in Mandarin) is a Shanghainese dumpling that is made of the thinnest skin and with a nice simple filling that consists of soup and pork and sometimes crab roe
it is so good and I love watching foreigners eat it while trying to also manage the soup inside, it's so fucking good holy fuck I have burned myself too many times getting to the soup too fast
how do they get the soup inside?
the soup is either jellied with pork fat or frozen as ice, which is then wrapped inside the dumpling skin and then steamed until it melts into proper soup

Awesome. I don't find many foreigners who like Korean food. Korean restaurants in the US tend to not tweak their recipes to suit the people's palate.
I plan on teaching English in Korea next year, but before I go I want to stop by China and go on a cultural mayhem.
