Okay part two of Macross Plus has cemented it as excellent
This animation is very impressive and the dub is fantastic. It's well translated, natural sounding, flows nicely, features great performances by numerous impressive voice actors, and the story behind it is well written enough that I don't think they had to change it much

Macross 7's music is better. Yoko Kanno is one thing, the epicness of Basara is another.

Comedy: Sayonara Zetsubou Sensei -- Lots of anime/rpg in-jokes.

Mech/Romance - Eureka Seven: An excellent show with a great plot and characters plus some good action and animation.
Comedy - Full Metal Panic Fumoffu: Of course you should should see all of Full Metal Panic but this in particular if want some laughs. It's hilarious.
Action - Cowboy Bebop/Samurai Champloo: Both are entertaining shows directed by the same guy. You can't go wrong with either.
Super Robot - GaoGaiGar: The Monster of the Week can get tiring after a while but it really starts to pick up after that and the sequel OVA, GaoGaiGar FINAL, is epic.
Mystery/Horror - Ghost Hunt: This is a surprisingly good show with some generally disturbing stuff.
Additional - Overman King Gainer: A wacky Tomino style show. It's got a ninja who uses a shotgun and abilities called Overskill.
