The number of adipocytes you have is not the reason you are chubby, its the amount of fat the adipocytes store.
For proof, do a Google Image Search for "lee priest off season."

The best thing you can do for your son is teach him to be comfortable and happy in his own body, even if he does have a belly or a little extra weight.
I'd imagine it would be incredibly uncomfortable to be in an obese body.
His son is two. He doesn't need to be worrying about body issues and obesity yet. Kids can and will pick up on this sort of thing, and it can lead to body issues and disordered eating.

Just give your son good food. He will know what he likes and what he doesn't, and when he's full. If he isn't hungry, don't sit him down and force him to eat. If he is, give him something to eat. Don't make him clean his plate when he's full. Don't give him crap food.

while adipocytes do show great plasticity in their size, there is evidence that adipocyte hyperplasia (as opposed to hypertrophy) is implicated in childhood obesity.

Do you remember being 2yrs old? I wasn't merely referring to his son. Anybody in an obese state of health must feel incredibly uncomfortable, physically.

I looked into it more, and if you're really fat, you can get more fat cells:

http://www.bestofweightloss.com/subpageLiposuction.html

This is really only an issue if you're already obese and your existing fat cells are essentially "full," meaning you have nowhere to store the excess fat.

For many people this isn't really applicable because they don't get that fat. Still, during weight loss, the size of a cell is rather small -- having gained 10% more fat cells won't prevent you from losing weight in the future, and the much bigger issue is going to be loose, saggy skin.

Also, as you can see on that website, the times when you don't want to be obese are essentially puberty. But obesity is bad for you pretty much regardless of how old you are.

I believe like many have said the key to be healthy is a balanced diet through out your life. My pediatrician always talked about this with my parents and with me as I got older. He would always point out what percentile for both height and weight I fell in as I grow up and it helped my parents figured out what, if anything, needed to be done about my development.

So yeah, as many people are saying consult a pediatrician for your little cute goober and teach/help him eat right and do fun things outside.
