After playing rock band and AC/DC at my house enough, my parents decided to get a PS3 slim and rock band for themselves. I just got them Little Big Planet, hoping that it would be a good way to get them into gaming, but what else am I missing? My dad loves the Tiger Woods demo, but Im hoping that he picks that one up himself.

Are they interested in more hardcore games or just want music/sports games? Because I'd recommend Ratchet & Clank (especially if they have a HDTV) and Burnout Paradise as really accessible, fun games.
It's also be worth looking on the PSN for a few games. Flower, flow, Super Stardust HD, Pixeljunk Monsters, Pixeljunk Eden and Shatter are all great and pretty accessible.
I don't know your parents, but based off the assumption that they're new to games, you want to avoid anything with "failure" in it for just now. When you're getting someone new into this sort of thing, what usually ends up turning them off from it first is them dying in a game. Stuff like Burnout Paradise and Hot Shots Golf is GREAT for someone starting off, because you don't "die". Sure, you can "lose", but there's no big scary game over screen to frustrate them and make them feel like the game is unfair.
Puzzle games are usually good for newcomers. I normally promote Trash Panic but as lCJ pointed out, the difficulty may turn them off. PixelJunk Monsters?
I would certainly second/third/etc. Hot Shots Golf. I'm not big on golf sims but that series is always fun in my book. Once they pick up the mechanics, it should be fun and not too hard until they unlock the later courses.

I am a parent (I'm only 31, but still...)
Even my wife loves this game. Truly an amazing experience.
Also, Zen Pinball could be a good choice.
