I think they've mostly been ignored due to the presence of Dragon Age: Origins, which takes what they were aiming for and improves on it.
The games and their expansions are still solid on their own, the expansions generally having more interesting content with the core games relying on generic fantasy story + "zomg neat toolset!" for their appeal.

NWN - not worth it (not even back then)
SoU - better then the base game, but probably not worth playing nowadays
HoU - supposedly the best Bioware NWN game (I didn't get far into act 2)
NWN2 - fun game, but a lot of people don't like it
MotB - best of the bunch, good story, get it
SoZ - okayish, enjoyable the first time through
Storm of Zehir is nice in that iin it you're just a bunch of greedy bastards who get swept up in shit and're just doing your damned best to keep your head above the water, none of this chosen one epic high fantasy bullshit like there is in pretty much everything else. Couldn't finish the main campaign and do not want to play Mask of the Betrayer that shit sickens me so.

Okay, update: went out, looked for Persona 4, no luck, so I decided to grab Lost Odyssey (I'm in the mood for a JRPG right now). About 6 hours in, really enjoying it, and totally stoked that Nobuo Uematsu did the music. The most fun I've had with a JRPG this generation (not saying a whole lot, I know).

However, I just really like that style of game (Baldur's Gate, Fallout, etc.) and I have the rather amazing ability to overlook a lot of bugs and other issues with games so take anything I say with a grain (or two!) of salt. :P

Tales of... games are RPG fastfood, im happy they exist because the cooks for the maindishes are so goddamn slow, but I still wouldnt recommend them to someone who hasnt played everything there is!

I'm sure a lot of people will disagree with me, but the next FFRPG that took hold of me like FFVII was FFX.
Many people didn't like the protagonist because he was too upbeat and obnoxious, but I thought it was a breath of fresh air from all the loner, depressed types that had filled the games before then. It actually made me care about the guy, especially in light of what he finds out throughout the story.
The soundtrack was also great and I thought that story was pretty good.
Just make sure you pretend that FFX-2 doesn't exist. It's for the best.
If you want to compare tastes, thought FFVI was alright, I loved FFVII, never got into FFVIII, hated FFIX, loved FFX, and didn't like FFXII.
Oh, I would also suggest checking out Chrono Cross. I preferred it to Chrono Trigger, and loved it about as much as FFX. It also has the best soundtrack of any game I've ever played. (Bring the hate!)

Final Fantasy Ten turned me off, permanently, about 5 minutes in. I had all I could stomach of it by the sports arena movie scene. I shut it off, gave the game back to my neighbor, and have never looked back. I kind of knew what was on its way after FF9, and I received all the confirmation I needed. There was no longer anything for me there.

Yes, I'd watched others play bits of the game previously. Even after those 30 minutes, it still had all the cinematography of a brick (despite being fully 3d now, something I called and was right on the money about). I detected no improvement in any direction I actually cared about and had an incredible sense of disenchantment. I knew the games no longer held anything for me, and indeed I was no longer the customer they had in mind while making them.
Not me, I think I beat it but it left absolutely no impression on me. Which is almost worse than hating it (I hated 8). But for 10, I hardly remember anything about it, despite beating it. It was like it never existed, it was so bland to me. I didn't hate it at all, or I wouldn't have beaten it, but I honestly can't remember a single point of the game.
I personally recommend these based on what I actually played:
Baldur's Gate 1 & 2 (do it!)
Neverwinter Nights + expansions
Morrowind
Fallout 3 (get DLC especially Broken Steel since it raises level cap and extends the game at the end)
Lost Odyssey (haven't finished it myself but I'm liking it and the male mortal magic user is funny)
Final Fantasy VI (you mentioned you have a DS so it'll play the GBA version. Haven't finished it yet myself)
Also I'd recommend Summon Night Twin Age for the DS but I'm not sure if it will stick with you. I did find the gameplay in the game to be pretty addicting and I was hooked to that game for a while. I would also recommend Final Fantasy X but I'm not sure if that will stick with you. I personally liked it but I have some gripes with it.
It's 'impossible' in the same way that it is to play fallout with 3rd edition rules, so I'm not sure why you phrased it that way.
Except that several campaigns written for 2nd edition have been updated to 3rd edition rules. Not to mention the fact that we're talking about an updated version of the same system, whereas your Fallout analogy would involve transplanting an unrelated rule set.
But anyway, it's really not nearly as big a deal as it is when playing tabletop, and isn't the focus of the games at all, so if you let that dissuade you from playing, then you should basically just drop the pretense of caring about game stories at all.

Ok, I'll be as blunt as you. It was a dumb question. If you want a total conversion, then you need to go look for one, because that's what it'd take - a different game engine. Or, if someone converted the entire story into Neverwinter Nights or something. Computer games are very different from tabletop games.

Tales of... series have extremely poor stories, but have excellent characterization. As in, I don't think ANY game can even come close to touching how skillfully characters dialog is written in those games. The skit system in particular is amazing. The other thing to realize is that the Tales of... games are, at least for the most part, comedy. There may be a couple of serious moments here and there, but the games almost never take themselves seriously at all.
tl;dr Tales of... is one of the best series because it makes me laugh.
