I haven't played a zelda since the NES but I feel like it's too late to revisit the classic 64 ones. Wind Waker looks kind of nice, TP looks pretty uninteresting, but I'm altogether uneducated on this. Where to begin?

you cant go wrong with either wind waker or TP. personally, i would recommend TP because the Wii controls make it a very unique experience and it also offers a lot more content.
of course wind waker is full of magic, so it really isnt an easy choice... i would go for the one thats more easily available to you.
and yeah, dont listen to the nostalgia drunkards. the N64 games arent a good place to start with anymore. while OoT is arguably redundant after playing TP imo, definately make sure to catch up on majora's mask later, since nothing like it has ever been done again.

Get one of the Ocarina of Time re-releases as they run at 640x480 and support progressive scan and play like it's 1998.

Ocarina of time is the first Zelda no matter what your view of the timeline insanity is. That's not even debatable. It also sets up the major players better than any of the games before or after excluding maybe wind waker

If you absolutely must play the modern Zeldas, don't start with Wind Waker, as it's an incredibly tedious game that would probably give you the wrong idea about the Zelda series. TP is good as long as you focus on the dungeons and ignore the bland, uninspired overworld.
Of course, if you'd like to play a game that is genuinely great in all respects other than graphical power, Ocarina of Time and Majora's Mask are available on Virtual Console.
Ignore most of the previous people, by all means.
OOT has aged very poorly compared to most other titles in the franchise. MM is genuinely interesting, but doesn't represent the series well as a whole.
Start with TP. It's the most polished game they've done, and it sums up everything the series is good at better than any other game. People putting it below OOT are inevitably blinded by nostalgia.
WW's certainly worth a play, but it's a flawed game. Don't start there.
Also give Minish Cap a shot, if you can find it.

I guess Ocarina wouldn't age well if somebody absolutely needs state-of-the-art visuals, but the actual gameplay and level design is absolutely some of the greatest in games.

Majora's mask had the advantage of only having 4 dungeons which meant they could be complicated and massive.
Mario 64 has not aged well. If you think OoT has aged poorly I fail to see how the game that defined like ten years worth of platformers with no innovation hasn't.
OoT is slow but the fact is it's the skeleton for all 3D Zeldas. I'd play it first so you know the basics.

Nope. The twilight portions of the game dragged like a broken muffler. The controls have barely changed at all, and they've aged just as much in TP as they have in OOT (which is to say, not much, because they were great to begin with).
Finding those tears was something you could do once, maybe. Doing it thrice felt like playing WoW except you weren't even rewarded with a biscuit.
We want to explore spontaneously and be rewarded for that. In OoT, you could mess around in the Lost Woods before heading for Hyrule Castle if that was your sort of thing. More that.
Other games may stoop to reward gamers with cutscene morsels and "story", but I think Zelda should be about seeing new things as often as possible, and interacting with the world.
OoT and MM felt mysterious. TP felt crowded and full of fetch quests.
