Despite owning quite a few 360 games, I don't have 1000 points in any of them. The closest I've come is maybe Bioshock, in which I've got close to 900. So take a look at this list of games and tell me which game would be most realistic (and fun would help too) to get the magic 1000:
Also, a minimum of multiplayer achievements would be good, since those seem harder (especially for older games). Plus I'd prefer to do this mostly single player.
Banjo Kazooie: Nuts and Bolts (leaning towards this one because I've owned it a while and barely touched it; though I see multiplayer achievements which would be tough)
GRAW 2: Again, the multiplayer ones would make this hard.
Lost Planet
LEGO Star Wars: The Original Trilogy: I have put a fair amount of time into this (already beaten it) and looking at the remaining achievements seems like it would still take hours and hours...
Red Faction: Guerrilla - Another strong contender, because I've not played it much.
Burnout Paradise
So there are my choices. These are not all my games, but they're the ones I'd be most interested in playing for a long time. Please don't suggest I just try to get the points I'm missing in Bioshock. It was a great game but I'd rather spend time on a game I've neglected for whatever reason.
Bionic Commando has really fun achievements, although some are quite challenging, and beating the game on Hard is no walk in the park.
Batman Arkham Asylum, if you can really grasp the challenges, is a candidate - but if you have trouble 3-starring the challenges, you'll be stuck at 900.
Yeah, see, I was looking for answers only from the list of games I listed. Of course I know there are much easier ways to get 1000 points. But I want to play a game I already bought, and I also am not necessarily concerned with doing it in a hurry.

none of those games seem like achievement mills
your best shot would probably be burnout, although i believe there are multiplayer achievements for that one and you'd have to be fairly good to get them if i recall
If time isn't an issue, then LEGO Star Wars: The Original Trilogy is probably your best bet. Just buy a ghost character and you can hammer out everything but the flying levels.
For Banjo I heard you can get a lot of the multiplayer achievements by just playing solo online matches, but I know it has one of those viral achievements for playing with a developer/someone who did. You'd have to set up with someone here to get that because multiplayer was pretty much always dead for that game so you probably won't find anyone to play with.
I'd do LEGO Star Wars. There are a couple multiplayer achievements, but they're not too bad. And you can find a decent guide over at gameFAQs for the blue canisters.
Regardless of the game, you're going to be hard pressed to get to 1000 points without a decent amount of unfun work to do. So why bother? Surely you have enough games in your backlog you could be playing and having fun instead of working the grindstone.

I recommend the Avatar game. No, not Avatar-The Game, I mean the Avatar animated series game. You can literally get 1000 GS in under a minute, as displayed in this video-
Burnout requires an Xbox Live Vision camera for some of the achievements. If you don't have that, you aren't getting 1000/1000.
Having said that, I'd say that while it won't be the easiest to do, you'll probably have the most fun getting all the points for Burnout. I've 100%ed it myself, aside from one bugged gate that I can't find to smash. I've poured more time into that game than any other this generation.

@vgreminders - Don't miss out on timed events in gaming! @gamefacts - Totally and utterly true gaming facts on the regular!
I guess I'll try Banjo. I know I could do Lego Star Wars - I've beaten it and the rest of the achievements just involve collecting a TON of crap. I don't mind collecting but that would take a while. I'd rather try a game I haven't played much.

A friend of mine borrowed my copy of N&B and got everything except the multiplayer stuff. I don't remember him saying anything other than just needing a little patience.
Then again I spent half that game making flying wangs that shoot homing missiles, so I didn't get as many.
I've platinumed (1000 pt equiv) these multiplatform games, none of them were all that hard, Batman AA, Fallout 3, RE 5 (Batman was challenging, but very doable, Fallout 3 and RE5 were only a little grindy)
I’ll tell you what happens in Demon’s Souls when you die. You come back as a ghost with your health capped at half. And when you keep on dying, the alignment of the world turns black and the enemies get harder. That’s right, when you fail in this game, it gets harder. Why? Because fuck you is why.
I'm also just going to throw out there that even if you get all 1000 in a game, if it has DLC that has achievements, it wont show up in the completed games list.
Borderlands (Hit max level, beat the game, rescue the claptraps, and go to that hidden boat place and you're good)
Fallout 3 (just do all of the quests, if you're playing the game you're gonna wanna do them anyway)
Oblivion (same with Fallout 3)
Modern Warfare 2 (the Spec Ops is pretty difficult toward the end, but the rest is cake)
Bioshock (pick up all the diaries is the only challenge)
Condemned (find the birds and metal, but there are simple guides for it)
My only 1000 point game is Phantasy Star Universe. It doesn't give them all to you in two minutes, but if you play through the entire story you get all 1000 without needing to do any goofy side questing or multiplayer stuff. I realize it's not in your list and probably isn't your cup of tea, but who knows?
On the flip side, if you want the hardest 1000 gamerscore you'll ever see without doing multiplayer, may I recommend you set a month aside for Dead or Alive Xtreme Beach Volleyball 2?
First game I ever completed all achievements on was King Kong. Paid $5 for it used.
You get 100 points every time you clear a significant area of the game.
Ten significant areas.
Sorta worth it to see a couple of cool ideas that probably would have been better off (and since have been better off) in games that had a little more time in the oven (the fire gimmick was sort of cool, as well as the way you check your ammo), but on the whole I wouldn't recommend spending any more than I did on it. Plus you get to shoot dinosaurs.

I am curious what 100 points you're missing from Bioshock.

Terminator Salvation - at least the PS3 version, grants all trophies for clearing it on hard. And it's really short. I don't see why the 360 achievements should be different.
Borderlands (Hit max level, beat the game, rescue the claptraps, and go to that hidden boat place and you're good)
Fallout 3 (just do all of the quests, if you're playing the game you're gonna wanna do them anyway)

Bioshock (pick up all the diaries is the only challenge)
Condemned (find the birds and metal, but there are simple guides for it)
Look at all those games that weren't on his list. Good job.
Also, suggesting Bethesda games or Borderlands is unwise. 1000 points with a 40+ hour investment at the very least.

Well i suggested Jumper simply because it can be had for $4.99 used at Blockbuster last time i checked.
Yeah I appreciate everyone telling me games I could buy for $5 and easily get 1000 pts. in little time. Those suggestions would be good if simply getting 1000 pts. was my goal, but it's not. It's to play a game I already own just to get the worth of money I've already spent. I also don't care about doing it in a hurry. I just wanted someone to tell me which, of the games I listed, I'd have the most fun in the attempt.
I am curious what 100 points you're missing from Bioshock.
In Bioshock I have 840 pts actually. Here's what I don't have:
Five Fully Upgraded Weapons
Weapons Specialist (Acquire all upgrades for all weapons)
Research PhD (Max out all possible research)
Avid Inventor (Successfully invent 100 items)
Historian (Find every diary)
Seriously Good at This (Complete the game on hardest difficulty)
Secret Achievement
Secret Achievement
So I'd need to basically start over and beat it on hard.
I do have both Fallout 3 and Borderlands and in Borderlands I've put in a decent amount of time; I'm at level 46. Maybe I should just work on that game for the 1000. Fallout 3 is a different story - despite playing it for 25 hours I just never really got into it. That's another post altogether.
It sounds like you settled on Banjo-Kazooie: Nuts & Bolts. It's a great game, but don't expect to max it out. There are a couple multiplayer achievements that can't be had in local multiplayer and a viral achievement that is next to impossible to get because either nobody plays online anymore or everybody who does knows when I'm coming and turns off their 360s. Also, if your goal is just 1000 points and not all achievements you can get the 1000 buy downloading the cheap DLC ($5) and adding that to your score. The challenges in there are harder than those found in the main game, but if you wind up enjoying building weirdo vehicles and doing the associated challenges then you'll probably dig LOG's Lost Challenges as well.

Burnout can be really difficult unless you practice and make yourself decent.
One requires you win an eight player online race, another requires you get 6 of the top scores in an online session...that one is tough and took me a while since the longer you go high scoring the bigger chance someone will top one of yours.
It's worth it though, it's still one of my favorite games this gen.

From the Op list, I don't think I'd go 1000 points with any of those games.
personally, my only 2 1000 points games are Fable 2 (pretty easy espicially since some acheivement can just be "witness" in coop games and DLC easily can make you get more points) and Borderlands (fun, easy game and with DLC you can get more than 1000 points)

If you use the sign out glitch it's a little easier, but jesus christ this. I will get this one day.
OP keeps complaining that he's not getting suggestions 'from his list'.
Understand this. The games on your list are not easy achievement farms. Look at the list of achievements and make the judgement call yourself. You already own these anyway, so wasting your time thinking about which one to start with is exactly that, wasting your time.
Crack a game, play it, work for your achievements. You probably won't get 1000/1000.
As a suggestion to what you can easily get 1000 on, I'll add NBA Street Homecourt. If you can find someone to play with online for the last achievement you'll have no problems. Just make 3 custom guys, one for each position and use that team online to destroy everyone in your path.
Oh, oh! Hardest achievements to get? I nominate the Pro Evolution games.
I've played sooo much of that and don't have very many achievements at all.
Part of it is that achievements won't rack up while you're playing local multiplayer, which is what I do 99% of the time. Most of the achievements also involve bizarre statistical anomalies over the course of ten to one hundred games.

edit: Fight Night 3 1000 pointer too..... damn what else did I forget

Bioshock is a good one to polish off.
Easy ones to finish:
Borderlands (basically beat the game, hit max level, and do 2-3 simple tasks; only difficult one is the 'viral' achievement)
Fight Night Round 3 (basically fight until you play in all venues)
Avatar: The Last Airbender (takes about 2 minutes for 1000 points)
Lost: The Game (was pretty easy, took a few hours to zip through)
Burnout is not the best shot.

Let me tell you about Demon's Souls....
By Odin's Beard, no! I love EDF2017, I've played it for hours and hours. I have one achievement.
You have to beat every mission on every level, plus find ALL of the weapons. Serious grinding.
look up your game
see what achievements you still need
read on how to acquire the missing achievements
decide if they are worth your time
thats a good place to ask questions too.
