Playing more wont make your character advance faster. It will still take the same amount of time to become proficient at flying battleships so it turns some people off as it feels like they have to wait and pay for their subscription to do some things (fly battleships or something like that). Yet if they were playing any other MMO they would have to grind 2 months for exp while in eve you just spend those 2 months doing whatever the hell you want, and that is a big problem for some players. They dont know what to do if there are no goals like "go kill 400000 rats to gain those levels".
You will never have the same skillpoints as the players who started before you (people moan about that) but you will be just as good as them at flying a specific ship (not all ships but pretty much most) in a few months if you specialize at it.
Eve gets boring if you dont have any friends to play with and if all you do is missions you will quit fast. You pretty much need to find your own fun instead of being hand held through a certain list of things that you have to do to progress.

My biggest deal in EVE is/was space logistics. Although you can often pay someone else to do it, it can get expensive to get what you want, where you want it.

We'll get you started up with plenty of money, and not flip out because YOU UNDOCKED WITHOUT A GANG AND LET A HOSTILE GET A KILL FFFFF. (Really, when eve uni is wardecced they don't let players undock alone and get quite upset).
Not to mention experiencing what they'll only talk about, will better help you gauge if Eve is right for you or not.

Eve Uni isn't terrible, but hell, if you join merchi you have access to the entire spectrum of the game and a crazy detailed knowledgebase to learn from.

This is a ridiculously broad question for a game like Eve, and I started to write up a big post, but here's something far more entertaining that should do the job:

How do I get permission to access the Goonwiki knowledge base?
Once your application is accepted ingame, then your forum accounts can be activated and you'll have access to the wiki and other tools.
This can take anywhere from a few hours to several days, because it relies on particular people being online. If getting access is taking a while after you get into the corp just ask about whatever you want to know about in corp chat. Newbies who want to learn are the best newbies and most people will answer your questions as best they can. I always try to anyway.

I can't seem to get on the goon server. It doesn't give me an option to enter a password anywhere. Also, the wiki says that the goon server isn't online most of the time - then what was the fleet on, if so?

most likely another alliance's mumble. probably the test alliance one.
There are a lot of things (even fun things) that you can do with only a few hours time.
The great part is that your character does the important advancement whether you're online or not, so you can spend your game time making isk and having fun.

So the ways to make money in this game as a new player involve searching for destroyed ships and crafting...the worst parts of WoW? Not trying to be negative, I am just trying to curve my excitement for this game because I think I have hyped it up too much in my head.

Well, you can train a few skills and float around with dudes throwin' nets on some motherfuckers pretty fast. If you want to make your own money quickly then yes, that's the way to do it until you have your PvEing skills trained up to the point that you can solo stuff that doesn't give garbage money.
Or you could use the Jaef plan and simply offline the majority of your starting training until you can solo. Wheeee.
