I'm looking for rock/electronic/anything modern that uses Eastern instruments, like sitars etc. Any suggestions are welcome. Tool uses them on occasion, and System of A Down also has some Eastern influences.
Look up the band The Tea Party and see if you can pickup their albums. Are you Canadian or American? I don't know how easy their stuff is to come across south of the border.
seconding the Tea Party. Lurvs them. Albums that I particularly enjoyed include Triptych, Edges of Twilight, and of course Transmission. I didn't particularly enjoy Interzone Mantras, so I'd stay clear of that album personally.
Also, Tabla Beat Science. It's a bit more techno'y but soooo much fun to dance to

Definitely The Tea Party. Transmisison and Tryptych are probably my two favorite, but the 2nd album they released (forgot the name, the one with The Bazaar and Sister Awake) is one with the most eastern instrumentation.
They're Led Zepplin + The Doors with "an eastern flair."
Cheb i Sabbah is great, and sounds like the type of music you're looking for. I saw him when he came to Seattle for Bumbershoot a couple summers ago, and he was fantastic.

I strongly second this but only the first three major releases and the third less so than the others. The two you need to hear before you die are:
Splendor Solis
The Edges of Twilight
the optional one is Transmission. Mostly because the first radio single was the worst song on the album and it was relentlessly overplayed.
A Hawk and a Hacksaw plays a Western interpretation of traditional Romanian (Roma, see: Gypsy) music. It is pretty true to traditional eastern European music, to the point where they tour with many Roma ensembles in their retainer.
No sitars, but lots of brass and accordion. Worth checking out if you're into traditional folk/world music.
The quality of this live recording is pretty good, but imo the album version does it much better justice.

The Secret Chiefs I posted are some of the members of Mr. Bungle. Trey Spruance, the main composer idea man for both bands, is very much influenced by eastern music in his compositions.
I meant to post this earlier and I'm aware that you're looking for specific music suggestions, but you may want to watch the Documentary called "Crossing the Bridge."
It's a documentary on Turkish music that you can find on Google Video.
