Rise of Flight: The First Air War is my current favorite flying game. World War One dogfighting is pretty awesome, and this game does a really great job of making it feel real. It's got a pretty rough learning curve, but this isn't the women's auxiliary balloon corps, real pilots earn their wings.
Youtube videos and reviews made it seem very arcadey.
It might be, I don't really play enough flying sims to compare. And given the type of planes flown, there isn't much to manage beyond flying. It's definitely still a sim, though.

IL-2 is pretty much all you need. Falcon 4.0 is nice if you want something more modern than 1946.
IL-2 1946 is the version of IL-2 you should get. That has everything. In the case of Falcon 4.0 look for the Allied Force version of the sim. That is the one that actually works. I've put a good bit of time into both of these sims, and I'm nowhere close to mastering either one of them. IL-2's Pacific Theater campaign for the US Navy has become one of my favorite thing. Nothing is manlier than WW II Carrier Ops. Learning to stick those landings is a great feeling. That is, if your plane is in good enough shape to land.
Not sure about any compatibility and stuff, but by god, i loved Strike Commander.
Last time I tried, it worked just fine in DOSbox. So did Chuck Yeager's Air Combat, another fantastic older flight sim.
And my overlooked recommendation, provided you can find them, is Flight Unlimited by Looking Glass Studios.

I loved me some A-10 Thunderbolt action in LOMAC (Lock on! Modern Air Combat)
its very much a sim though.
MS flight sim can be a good time too, i've done several cross country trips in it. My airline is pretty badass though because its usually just set the auto pilot, then drink some booze and play games till i'm all "oh shit, landing at PDX in 10 min."

MS Flight Simulator is fun, because I often take military fighters and buzz other airplanes in the sky.
I'd recommend Apache vs. Havok, and it's expansion Comanche vs Hokum, if you're into helicopters and blowing shit up.
It has much of the same realism/tedium of the Falcon 4.0 and IL-2 simulators, with the air traffic control aspect from MSFS, yet you can dumb it down into an arcade game with some decent physics. I believe both of those are available on Impulse/Steam right now.
And if you really get into it, and people still play multiplayer, I'd really recommend it. It turns into a submarine game, essentially. Where you're trying to find the other player(s), and not give yourself away, because the RADAR works both ways...
Edit: According to Wikipedia, both games are open source, and "heavily modified." There apparently is a sequel too, that I haven't even heard of. All I know is that I've seen Apache vs Havok on Steam/Impulse, but since I already have the CD's, I didn't want to buy them again.

I think IL-2 Sturmovik is accepted as the prime WWII flying game. I got it in a Steam sale a while back, haven't tried it yet. I blame my crappy Microsoft Sidewinder.
For space flight sim, Freespace 2 cannot be suggested hard enough. The vanilla campaign is awesome, but it also has all the great mods out there, including total conversions to Wing Commander and Battlestar Galactica, and a port of the original Freespace campaign, all of which are really good. Plus what other 11 year old game looks this good??

Is Falcon 4.0 still the peak of modern fighter sims? That would be ridiculous since it's over 10 years old...even if the flight sim market has taken a nose dive. From games that old, F-22 Raptor's demo had some decent action and simulation aspects in it (although not nearly as complex as Falcon). Then again, A-10 Warthog is even older and it was also enjoyable for blowing things up. Unfortunately, MS Flight Simulator seems to be the only new game in town anymore.
What's the oldest MS Flight Simulator that has military aircraft? I think I have 2000 (or possibly one slightly newer), but the 'best' aircraft it has is a Leerjet or something similar (or are these some form of add-on/DLC?).

FS2 and the FS open mod are the finest things ever created. All for $6 too.
FlightGear should cover all your flight simulator needs, and there's a ton of planes and places you can download.
