Winamp, i'm a bit of a nullsoft fanboy but it rocks as a media player/library
I'd tend to recommend foobar over winamp since winamp's UI has historically been all kinds of odd, but truth be told Windows Media Player 11 is quite good.
Really, if you want software that works well with 7's new task bar, the pickings are kind of slim at the moment.

It grows every day though. I've even noticed some of my favorite open source programs have recently released updates to make them work with the Windows 7 jump menu stuff (Notepad++ comes to mind).

I just tried that and after setting up my account, it would sit on the taskbar and not let me restore the window. Clicking on the "Change my settings" option would bring up that window, but the program itself refused to actually show itself, bar sitting on the taskbar.

...and I thought of how all those people died, and what a good death that is. That nobody can blame you for it, because everyone else died along with you, and it is the fault of none, save those who did the killing.

If you're a minimalist, or a bit of an icon hater (like I am), launchy is awesome. Press alt+space, and you can type in the name of the program you want to start. Only a couple characters are required as it learns what you normally use, and it really has next to no footprint.
For the sake of security, you may want to grab Sandboxie. Creates a virtual sandbox for any program you choose, segregates any changes made to the harddrive by that program, and lets you delete it later. That way you theoretically have nothing left on your hard drive like [strike]porn browsing[/strike] account numbers.
If you want to dress up your desktop, rainmeter is a great front end for all sorts of widgets. You could make something like mine (though I've just gotten rid of the bottom taskbar)
The Zune software is actually quite a nice (if somewhat resource heavy, from my experience) media player, and storefront. The Zune Pass service is pretty great. No need to own a zune to get good use out of the software.
Launchy does much better fuzzy matching - something like "pshe" will get you powershell in launchy but no results in the start menu. It also does better when learning which of several similar named things to offer first based on what you select
I'm finding that the search doesn't work, whether I type in the whole or part of the name of the program, or even the name of the executable. Is there anyway to force it to index the list or programs, but it really annoys me that the search doesn't work and that I can't use the classic start menu either to quickly start programs.
Switcher - Exposè type window switching (press WinKey + ` to activate). Pretty nifty.
DisplayFusion - If you have more than one monitor and you don't have this, then I pity you. (Unless you use UltraMon if that works still).
Notepad2 - Even if you prefer another, more powerful text editor, you should at least use this as a replacement for standard notepad (you will always open it up sooner or later). It's a billion times better, though it lacks some features from say Notepad++ that are handy, too.
Katmouse - This lets you use your scrollwheel on windows that do not have focus (like if you are IMing someone with your browser in the background). Make sure to disable the middle-click function, though.
ClipX - did you accidentally copy something before pasting something else? No longer a problem! I bound this to WinKey+V to open up my clipboard history.

Make sure the indexing service is actually running. By default it indexes your user folders and programs menu, and possibly some other useful locations.

If you use gmail, get this gmail notifier: http://www.ghacks.net/2009/05/31/windows-7-gmail-notifier/ Google's doesn't actually seem to work in Windows 7 anyway.

This is magic, thanks.
+1
Unless you hate the taskbar and think the start menu is ugly. Both of which describe me. :P

You can minimize the taskbar and still use this functionality.
What kind of performance hit does that cause? Also, how painful is uninstalling it, if one were to choose to do so?
It looks really cool; I've just had bad experiences with those kinds of things in the past.
I've been looking into this one a bit. Outlook can handle Google calender without batting an eye.
In Vista you can just used the Windows desktop calender to sync to Google Calender.
If you want to use Google Calender in Windows Mail you would have to route it through a Hotmail/Live account.
A little. Luanchy was snappier by a second or two when searching, last I checked.
because I don't just stare the empty desktop all day

Also, I'd recommend Pidgin as a good, simple chat client.
I still use it though.
WLM seems to work great with main stream email protocols.
Eh, I'd recommend Miranda IM over it. Unless maybe they finally fixed the part where file transfers don't close the file.
