You can't rely on the actual values given, but you can still use them as an indication of relative worth, and as a guide for what to pick up/keep and what to vendor.
Non-exhaustive list of items which might be worth keeping:
Weapons
4 socket flails, ethereal or non-ethereal. Keep superior only if ethereal. Don't keep too many, these are common.
4 or 5 socket crystal swords, ethereal or non-ethereal. Keep superior only if ethereal. Don't keep too many.
3 or 4 or 5 or 6 socket Phase Blades. Phase Blades never spawn ethereal. Superior is good. Don't keep too many.
3 or 4 or 5 or 6 socket Berserker Axes. Keep Ethereal only with 4 or 5 or 6 sockets. If non-ethereal, superior is good with 10-15% enhanced damage. Don't keep too many non-ethereal ones.
4 or 5 or 6 socket Colossus Blades, ethereal or non-ethereal. If non-ethereal, superior is good with 10-15% enhanced damage. Don't keep too many non-ethereal ones.
4 or 5 socket elite polearms: Colossus Voulge, Thresher, Cryptic Axe, Great Poleaxe, Giant Thresher, preferably ethereal (but keep one non-ethereal 4 socket one so you can roll a quick Insight if you need it), superior or normal quality. Keep 5 socket only if ethereal, perhaps.

0 or 4 socket Staves, normal exceptional or elite, with +3 to Energy Shield, +3 to Thunderstorm, +3 to Frozen Armor, or +3 to Enchant. Props to you if it comes with three of these +3s. Keep 2 socket Staves if it comes with +3 to Enchant. Don't keep too many of these either. Like the other caster items: ethereal or non-ethereal, superior or normal or cracked or whatever.
Armor
0 or 3 or 4 socket mage plates with at least 250 defence.
0 or 3 or 4 socket archon plates. Keep Superior only if it comes with 10-15% enhanced defence, not Increased Maximum Durability or some other useless gold-sucking mod.
0 or 3 or 4 socket dusk shrouds. Keep Superior only if it comes with 10-15% enhanced defence.
0 or 3 or 4 socket Wyrmhides, Scarab Husks, Wire Fleeces, and Great Hauberks are all also worth using but are unpopular. People will take a lower defence Archon Plate over a higher defence Scarab Husk for unknown reasons. Don't keep too many; try to get at least 400 defence.
ethereal 0 socket armors with at least 667 defence. These will get 1000+ defence once glitched. Superior is good.
Shields
0 or 3 or 4 socket elite paladin shields: Sacred Targe, Sacred Rondache, Kurast Shield, Zakarum Shield, Vortex Shield with either +40-45 all resistances or 60-65% enhanced damage and whatever attack rating. Keep ethereal only if 0 sockets; keep all non-ethereal. Keep Superior only if it comes with 10-15% enhanced defence. Keep Low Quality, Crude, or Cracked if you're looking for 3 sockets and are desperate; restoring it to normal quality will re-roll the automod and set ilvl=1.
0 or 4 socket Monarchs (elite Kite Shield), non-ethereal. Keep Superior only if it comes with 10-15% enhanced defence.
Helms
0 or 3 socket elite druid pelts: Blood Spirit, Sun Spirit, Earth Spirit, Sky Spirit, and Dream Spirit (you may have noticed a pattern!), with +3 to Hurricane and Tornado, non-ethereal. Keep Superior only with 10-15% enhanced defence.
0 or 3 socket Diadems. Take the 0 socket Diadems and Imbue them. Don't keep too many. Keep Superior only with 10-15% enhanced defence.
0 or 3 socket Demonheads and Bone Visages with more than 150 defence. Don't keep too many.
I'm pretty sure people also like Claws, but hell if I know what to look for in them. Once we've got a list I'll post it to the OP.
I'd keep 0 socket Archon Plates too if the defense is 500+ and try my luck getting 3 sockets. Some people are pretty selective when it comes to their Enigmas. You can generally fetch an Ist for it, which is worth the Tal, Thul and PTopaz. They aren't the most valuable items and 4os Archon Plates are still wanted.
For the pally shields, I would narrow it down further to keep ethereal if you eth bug it to 4 sockets or some sort. I know if I have a Vex/Ohm, I wouldn't waste it on a non-eth bugged shield.

Note the normal part, so superior/socketed items won't work with the recipe. Eth items get a 1.5x defense bonus, and when you eth bug it, the defense bonus is applied again (1.5x*1.5x) as well as gaining a random socket #. So you can get eth bugged armors with 1k+defense, and depending on the runeword that number can easily go up to 4k+ (Stone and Fortitude have 200+ enhanced defense).
Back in 1.10, there used to be a bug where unique ethereal armors would lose their ethereality when upgraded - in calculating the new base defense (which rerolls the base item), Blizzard forgot check if it's ethereal. So upgraded ethereal armors would become non-ethereal.
When fixing this bug in 1.11, they fixed it using the simple logic "if the initial item is ethereal, final item is 'etherealized' and 50% defense applied". But they made the fix apply to ethereal armors rolled using the cube socketing formula as well. Whoops! So ethereal armors (where the base item isn't rerolled) get 2.25 times more base defense, instead of 1.5 times.

Depends; letting players in is fine, but it also lets ad-bots in (very annoying). I think you can set level-restrictions to keep them out, I don't know what their levels are off hand.

My Necro is almost level 25. What should I be planning on doing once I rush A5?
He's basically naked, which isn't a big problem for summoning but maybe will be?
it makes me want to go lightning, not to mention the boredom
in every game with specializations i tend to switch around a lot to keep things lively and i'm feelin' a switch coming on, despite how much i like how well meteorb is going for me
lightning looks fun and i would probably have enough killing power to do more bosses than i currently run

+skill items will boost native auras or skills, like Prayer from an Act II mercenary, or Glacial Spike from an Act III, or Bash from an Act V.
Depends how much you like to trade. The really dedicated hoard every 4 socket flail they see. How much muling do you intend to do?
I've never done any trading at all before, I basically just don't want to pass up something that's worth something I could use.
How valuable can socketed items be? Is there any reason to keep, say, the 5 socketed Thresher I just found?

Should be OK; you'll probably want to use a Spirit shield or somesuch anyway, so double claws won't be an issue.
