I'm pretty sure between Emerald Platinum and HG or SS you can get nearly every pokemon and get a good grasp of the series.

HG/SS is the most complete feature rich set in the series. Platinum has an absurd amount of pokemon in it, and FR/LG is an absolute classic.
I say ignore the Gen one remakes solely because every pokemon in them is obtainable in HG/SS. Emerald has gen 3 only move tutors, the cloning trick which makes a ton of TMs easier to get and breeding tricks as well.
