Oh shit! I just remembered an icehockey game that was fun as.....cant bloody remember the name of it (bangs head on desk). I think it was NHL hits or something.
Also, another vote for the Hunter games. They were pretty fun to play. There was a splitscreen racing game I recall enjoying, too. Speed Kings, I think it was called. I don't remember if it was 2 player max or 4.
Definitely Marvel: ultimate Alliance (it is available for the xbox - checked). I've played through it and the Legends series with friends, and if you can commit to characters early, and customize them as they advance, it's a lot of fun.
I have to recommend against gauntlet seven sorrows. It's prettier than gauntlet: dark legacy, but it's SERIOUSLY lacking in depth. You can play through in around 5 hours. The story is just "meh".

Hunter: Redeemer (much beter than original)
Dungeons & Dragons : Heroes (cash money)
Time Splitters :Future Perfect (not sure it's on xbox, i've only played it on ps2)
Gaunlet: Dark Legacy (a reincarnation of the last gauntlet arcade game, fun and long)

I tried the Fallout game and didn't like it much, plus it's only 2 player
Eventually I will get a Wii and a 360 but as I just bought a house I have to squeeze all the fun out of the things I already bought
Besides that, Fuzion Frenzy wasn't too bad (and is around 5 dollars now).
Was pretty fun on the 360, the xbox version can't be that bad.

Split screen games but in my opinion, the mulitplayer is well worth it
Kung-Fu Chaos (kind of a fighting game, more like Power Stone. It's a blast)
