Friday, Saturday, or Monday are generally okay days with me for HA. Tuesdays are helping Anet days so I usually won't be able to do them unless something is canceled, but I generally won't know until Monday/Tuesday.

I can, but that will have a higher probability of hockey interfering. We mostly play Sundays/Mondays.

Monday wouldn't really be a good time for me, as I wake up for work fairly early and thus sleep fairly early. Fri/Sat are my best days for late night Guild Warsing.
Thinking about playing this again, one thing though. I haven't played in a good two years and in turn am lacking both Nightfall and eye of the north, how boned am I without those? If they go on sale in steam ill probably grab them but until they go down ill be waiting.

Both of them introduce some pretty nice skills for all the classes (especially the PvE skills from EotN), but they're not essential. You can still make perfectly good builds with Core, Prophecies and Factions skills.
Don't expect to have a lot of groups though. Without EotN you won't have to worry about the hall of monuments stuff because you won't be able to do them.

Also, do minipets still go for a fair amount now a days? Since it has been awhile I got a good 10 birthday gifts and wouldn't mind selling them.

I didn't realize there was a second Me option, and I'm not sure if I like VoR better or Energy Surge. Burning Energy is super effective denial.
we might change up Hexway a bit to see what people can or cannot run, or just run a balanced build
