I've recently found out I'm going to be in possession of a PSP this Thursday, and found out that I know precisely fuckall about PSP games. I know I'm getting Valkyria Chronicles 2, Patapon, and a Star Wars Battlefront game, but other than that, I don't know what's good on Sony's little obscure system.
Those are the games I put the most time into. I dont play my PSP much anymore other than the occasional PS1 game from the market or for games ported to it: aka Persona

I liked Crisis Core a bit.

Portable PS1 games is a huge part of why I'm kinda tempted to get one. FFVII-IX, RE1-3, Silent Hill, FFT and the other awesome JRPGs...there's a ton of great stuff there.

Isn't the PSP version of that game Japan-only with no English language option? Not saying you shouldn't recommend it, but that little tidbit is probably more important than whether or not it's hard to find.
I agree that Ys Seven is pretty damn good. I'm probably 6 or 7 hours in and really digging it. It's rare that I get into a JRPG, but the combat is fast and fun.
Mega Man: Maverick Hunter X is another one I'm playing right now. Even if you've already played the SNES original a bunch, Hard mode and Vile mode are both worth checking out.
Castlevania: The Dracula X Chronicles. Two great CV games, one low price.
Its been five years and I'm still playing it for hours at a time. I suggest the first one, my enthusiasm for the series kind of went away after they started putting the black eyed peas in it.
Try Gitaroo man if you like music games. Japanese-y story, but the actual game part is tons of fun.

If you like Ratchet and Clank, Size matters is pretty fun.

I think there's a Super Robot Taisen available on the PSP as well, which should be pretty aces if it's based around any of the PSX games.
Also, you really need to check out Disgaea, great port for an engrossing SRPG.

Honestly at this point I'd skip Monster Hunter Freedom Unite and wait for Monster Hunter Freedom 3. As much as MHFU has a massive amount of content, the only thing it did to truly improve upon the 6-year-old Monster Hunter 1/G engine was make item storage convenient for the first time.
With a new engine including MH3's massive (-ly overdue) improvements to the fundamentals of the game, Freedom 3 is set to be a better game in every way, and it already shows in the Japanese demo.
Collision very accurate to what you can actually see
Better Controls
Better graphics and color depth
Better Menus
Revised and much, much improved move sets for all weapon classes
New, very well-balanced cast of large and small monsters
Monster "recolors" are actually very different subspecies instead of the NES-like "the red ones are harder".
Fantastic new levels.
A vastly better localization which retains the game's sense of humor.
It's much needed fresh start for Freedom, similar to the MH3(tri) reboot, and a superior choice for new players.

This game is a hilarious send-up of RPG cliches in a format whose mechanics actually make a weird kind of internal sense after a while. I think of it as something like an RPG game show.
If you like action puzzle games, Crush and Exit are both a lot of fun.
Also, if you like strategy RPGs, consider Wild Arms XF. I think it sold precisely squat, but it's unusually deep and interesting. The PSP has a disgusting number of excellent SRPGs though, as other posters have demonstrated.
Gonna name some titles here that are rarely recommended, but still good. After all, if you're buying a PSP you probably already know about high-profile games like the God of Wars and the Metal Gears and what have you.
Neverland Card Battles: It's a strategy/card game, with a bit of reversi thrown in, and it's pretty good. Actually, it's pretty broken, with enemy decks way, way outclassing your own, and they get worse as the game goes on. BUT, their AI is so dumb that it balances out to be a really fun, and really challenging game. Just don't expect much from the production values, and you'll be ok.
Echoshift: This is a really great puzzler, that borrows the mechanics of that flash game Click*10 or whatever, where you repeatedly play a level over and over, and the "echoes" of your past playthroughs help you complete it. What's great about it is that it is intensely forgiving, and almost anyone could beat any stage. You're allowed 10 "echoes" for every level, but the most any stage explicitly requires is 4. The game is essentially as challenge as you want it to be, which is a trait I think more puzzle games should have.
Armored Core 3 Portable: The controls take some getting used to, but once that's down it'll make you wonder why Armored Core was ever on a console. The setup is absolutely perfect for a portable system, with missions taking under 10 minutes, punctuated by tinkering with your giganto-mech. I was really impressed with this one, and I think it's 10 bucks or so?
