So the test run for the peanut butter bacon cookies had excellent results. I liked this recipe better than the previous one I tried since it used some of the bacon fat as a shortening. Hope no one's allergic to peanuts. Cause I got peanut dust all over my kitchen at this point.

I've mailed pies before. You end up paying more for the packaging than you do for the shipping, but you can do it. Pumpkin pie won't be too bad,. Trying to mail a cream pie in July doesn't work too well.
Make sure the pie is completely cooled.
Freeze the pie.
Buy a styrofoam cooler that the pie will fit in.
Get at least 3-4 of the blue freezer packs.
Put the pie in a smaller box and pack it in the cooler with some of the freezer packs underneath it, around it and on top of it.
Pack the rest of the cooler tightly with either styrofoam peanuts or newpaper.
Seal the cooler tightly with duct tape.
Pack the cooler in a mailing box.
Fill in any gaps with newspaper so the cooler doesn't shift.
Address and mail.
That works for overnight shipping. I think it would be okay for 2 day delivery also.

So this batch of molasses cookies are super puffy. No idea why but Tank assures me they taste just as good. I also ran completely out of flour so I have to do the peanut butter cookies tomorrow. I may throw in a mystery cookie to go with them all.

Did you use brown sugar along with molasses? I usually cut the amount of brown sugar in the molasses cookies to keep them from getting too soft & puffy. Using more butter and less shortening can also make them more crispy.
No brown sugar. Not sure what happened. I made them last week the same way and they were bigger across and not as fluffy. Very weird.

Cookies are really sensitive to batter & oven temperature. If they're cooler, the shortening doesn't cook out as quickly so the cookies don't spread out as much and are softer/puffier. If they're warmer or are using a shortening that cooks down quickly, they spread out more and are crispier. And shortening doesn't bake out as quickly as butter does.
The Good Eats episode on cookies is very good and has a lot of useful little tidbits.
