My boyfriend and I have recently switched to a vegetarian diet. His birthday is January 6th and I want to cook him a nice meal. In the past I've just cooked him a nice steak with varied accompanying dishes but I'm having trouble finding a fancy non-meat equivalent meal. Any suggestions? Any difficulty level is welcome.

And this is impressive-looking and is GREAT with a nice green salad and bottle of red wine:

More than just recipes, it is an approach to vegetable perfection.
fantastic book, can't recommend it enough, none of the recipes have steered me wrong
If you have any specific recipes you want to vegetarianize, feel free to shoot me a personal message. One of my specialties is making vegetarian food that is near indistinguishable from carnivore food, or vegan/atarinizing traditional dishes
