The Guiding Principles and New Rules document is now in effect.
Carmina Burana (really the opening song 'O Fortuna', by Orff, mentioned above)
Fanfare for the Common Man (Copeland)
Believe it or not, the soundtrack from the movie Dragonheart (Randy Edelman). The movie sucks, but the soundtrack is reused in every third movie trailer you see. Don't believe me? Listen to this track at about 2:28.
Several tracks from the OST of The Last of the Mohicans by Randy Edelman and Trevor Jones
Several tracks from the soundtrack from the movie The Rock (Hans Zimmer et. al.)
I'm sure "Bishop's Countdown" from the Aliens score has been in more epic/action trailers than anything else.
Hans Zimmer's stuff is good, and so is the stuff by his protege - Klaus Badelt (although he basically borrowed Zimmer's Gladiator theme for Pirates of the Caribbean, which I thought was a bit lame). If you can find the Equilibrium soundtrack (it was never *officially* released), there's some really good tracks on it.
To hell with Ride of the Valkyries, do what Coppola did and just use the entire overture to the third act of Die Walküre. It's way cooler with the vocals. The full recording is only available in the 14-disc Solti ring set, but you should be able to find that at any decent library.
Dvorak's 9th Symphony, 4th Movement
One of the themes from Gettysburg was used to hell and back in the '96 Olympics coverage
Theme from the soundtrack to Glory
Soundtrack to Braveheart
Chinese: Long de Chuan Ren
Chinese: The Butterfly Lovers / Scholar Liang & Lady Chou (this probably isn't epic in the sense you mean, though)

Star Wars Episode I soundtrack.
Obligatory Carmina Burana mention.
the "no true scotch man" fallacy.
John Williams. Actually, all his music is pretty epic.
This is the song on the 300 trailers, and it makes you want to jump up and beat someone's face in.
Prelude to War! Prelude to War!
Schubert's Der Erlkönig. I'd honestly love to see a metal band play this dethklok style.

I mean, christ, Riders of Doom has been used in every Zelda trailer since OOT. You can't go wrong here.
Hey, you're right. (BTW, the composer was directly ripping/riffing off of Carmina Burana.)
the "no true scotch man" fallacy.
its the song in all the "epic manuever" ytmnds
