The character models are definitely more "spiffy", I think perhaps you are remembering the 64 version too fondly?
I still have the original on the N64 and played it just last week, the models look really bad. Even the DS version of Mario 64 had updated models with better poly counts. The StarFox models look like the older ones in a basic gourand shader.

It's got that whole... this feels like it hasn't changed at all vibe. The faithfulness of the adaptation, the distance of the original, and the fact that 3DS graphics are still below the curve compared to the cutting edge of PS360 stuff, means you don't notice the upgrades.

Yeah, that is kind of odd. I would think a straight 3D port of one of the big Gamecube Nintendo games (Metroid, Mario, Zelda, or even F-Zero or Wave Race) would be less work and sell just as well or better than a N64 enhanced port.
Oh and since Capcom is no stranger to ports - REmake 3D. Make it happen.

My personal guesses here:
I think Ocarina of Time was something they've been wanting to remake for awhile. They've sort of said in interviews that they were looking to do it, but were worried about doing it right since it's such a popular game. It's possible Ocarina of Time DS was planned at some point, or at least suggested (since hell, DS is practically an N64 anyways). But for whatever reason, they moved it up to 3DS instead - perhaps they wanted it to look better, or 3DS was close enough coming that it made sense to "upgrade" it, whatever.
As for Starfox 64, it kind of makes sense. Starfox (classic) was their first real polygonal game (or "3D" game, even though technically polygonal and "3D" are not the same :P). And Starfox 64 is regarded as the best one. I'd guess at some point someone made a tech demo of a Starfox level to show off the 3D, and someone else saw it and said "that's awesome, let's turn it into a full game", and so they did.

It's clear the 3DS is capable of displaying graphics that are visually "better" than the Gamecube, but the two systems have different strengths and weaknesses. It would probably be more work to faithfully port a game like Super Mario Sunshine than it is to completely remake a game like Star Fox 64, and there's still a good chance it would come out looking worse than the original version.

The things you could do with depth perception...
I'm not talking about just having things pop up in your face, I'm talking about having the game lie to you about the geometry of the level or the positions of enemies. Have invisible enemies that have presence even though they're nearly impossible to see, or illusions that project into the terrain rather than standing where they should be. At the most extreme, have environments where what your individual eyes see is a complete lie, and you have to move around relying solely on depth perception.
So can I cheat and get more coins by changing the date on my 3DS?
Apparently if you change the time back, you'll lose any coins you gained during the time change.
Nope. I've gained hundreds of coins doing this. Change the time forward a day, earn 10 coins, change it forward another day, earn another 10 coins, set it back to the correct day, earn yet another 10 coins (even if you've already earned your coins for that day - if you've got 1300 steps, the next 1000 will earn you 10 more!).
When midnight rolls over into the next day, all the extra steps on future days will have been forgotten, but the coins remain. You should always try to make sure you set the date back to the correct one when you're done, but it's not crucial and won't cause any major problems.

That's awesome... I hit 9500 steps today at work, so I lost out on all those delicious coins. Going to have to change the date on my 3DS on my breaks tomorrow.
A Wind Waker rerelease is on the horizon. We just have to hope it's more than a port. Adding in the 3 cut dungeons and perhaps spicing up the islands a bit would make it the best Zelda, easily.

Today, I finished the skirmishes (and therefore reached 100% completion) in Ghost Recon: Shadow Wars. The system tells me that I spent 65 hrs on it. This sounds like a lot... does it count sleep time?
In any case, there's a lot of tactical gaming goodness here. I would have liked more personality from the characters and/or a more interesting story. Hopefully there will be a bunch of other games in this genre to pick up the slack.
For me, the toughest skirmish missions were:
-The one where you use the Megadrone. I thought that this was impossible, until I read the objective and found that I didn't have to kill the tanks.
-Urban shootout. Outnumbered and outgunned, I only was able to beat it thanks to AI foolishness. If you don't advance your troops early on, the enemy sends their troops in small, easy-to-manage chunks.
-Lighthouse defense. It seemed like the second (or was it third?) time that I attempted this mission, the AI was less aggressive in sending its units at me. Around the time the snipers showed up, a bunch of troops stayed on the edge of the map until I moved an engineer out of the lighthouse.
-Turret defense. Pretty fun mission, though it took me a couple of tries. I used a gunner, recon, and then the commando. Lots of suppression, rapid-strike knifing and rocket attacks.
I'm feeling a bit of buyers remorse on Ghost Recon. It's a cool light game and the mechanics are interesting but the whole product is just generally bland. Not to mention that I'm not really huge on games with war conflict stories.
I'm thinking about selling it back to GameStop and getting something else in return. Maybe RayMan. I've never played 2.

A bit of a warning, Rayman 2 is old. Neat, but old.
It has some good set pieces, but it sort of feels like it's lacking something somehow, like it doesn't have much to it beyond those set pieces. It isn't the sort of world that you can just enjoy running around in, if that's the sort of thing you care about.
The amount of mii's I've lost to a bloody dark room is quite frankly amazing.
As an aside Ghost Recon is amazing, though admittedly the plot is nothing to write home about.
