Recipe Ideas

Looking for two kinds of recipes:

1) Anything involving plain yogurt. My boyfriend and I have three containers of it right now and it needs to get eaten in the next few weeks. We do use a fair bit of yogurt in our cooking (it shows up in our muffins, tzaziki, salad dressing and cream sauce) but we're looking for other ways to use it.

2) Vegetarian main courses, preferably without tofu. We both like beans; chickpeas and lentils are fine. We're not strict about the vegetarian thing, so beef broth or something as an ingredient is okay.

    Vegan Dad Cajun Chickpea Cakes

    These look so good, I keep meaning to make then and just seem to never get around to it. I hear his recipes tend to be pretty good. You could make them nice and spicy and use yogurt as a sauce to cool them back down.

    Some parve recipes. Kugel is generally safe for vegetarian cooking.

    Some yoghurt recipes. This list has specific recipes. I've also found that yoghurt is perfect for hiding the oxidation in fruit salads that have fruits that tend to turn brown (apples, banana).

    If you have a blender you can use up a lot of yogurt by making fruit smoothies. Warning: they are super addictive.

    I'll also throw in my hat for smoothies. A quick but satisfying one (to me) is:

    - 2 bananas
    - couple tablespoons of peanutbutter
    - couple tablespoons of yogurt
    - 1/2 to 1 cup of milk/heavy cream/half-and-half/whatever

    it's pretty thick so I recommend blending the bananas by themselves first.

    I like making Sweet Lassis to use up leftover yogurt. And a favorite vegetarian main of mine is Lentil, Spinach and Bulgur stew though I do mine with barley instead of Bulgur.
