Getting the hang of things now and decided to stick to a 3 rax marine/marauder opening- pressuring their front at 50 food and expanding. Working well so far, down here in silver :P - although been called a cheeser a few times, is this build cheese?
Cheese is difficult to define. It is certainly far from a macro build.

I feel like 50 food is waaaay too late into the game to be called "cheese."
To me cheese is something that happens pretty early. Like proxy void rays, or proxy gate, or proxy dts, or proxy 2rax/1rax, or 6pool, etc.

I can agree with this. a 3rax build from 1base that pushes at 50 food is definitely an all-in (though maybe not at that low level, as your opponent is not really that likely to have expanded anyway), but not really what I'd call cheese.
@Phaerun - basically don't worry too much about what people think of your builds. if you're having fun with them, go for it. Just bear in mind you improve faster using builds centered around early expansions than you do with 1 base builds, and its generally builds that are done from 1 base that get people the most annoyed.
I think a pretty standard cheese definition would be...
"Just kind of rolling the dice, hoping they can't scout it, hoping they have a build weak to it, and you have no real follow up if they hold your push or scout what you're doing."
Which to my mind encompasses 4-gate, 5-gate nexus cancel, 6-gate all-in, DT rush, fast void ray busts, 2-rax where you pull more than 2-3 scv's, 3+ rax pressure before anything else, anything fast-pool...

The problem i'm having is trying to find a build thats decent against all races so i can get the hang of macro/micro (a move atm . I either do the prev mentioned 3 rax or a 1 rax, 1 fact, 1 starport, but kinda not sure where to go with it. Do i wait to be attacked and if i'm not then keep expanding? What kinda food level should i think 'right, got lots of shit, lets attack' ?
BTW dunno if it's been talked about yet, I kinda skipped over a bunch of pages, but XSplit is going paid in July. You can pre-order now for a discount. Prices aren't too bad. $40 pre-order for personal edition (not allowed to make money from your stream lol) and $60 for premium (unrestricted). Non-pre-order prices are $60 and $100.
I'm not quite sure how I feel about that. If/when I get money to pay for that kind of stuff, it might just be more worthwhile to get Dxtory (one-time cost) and use that with FME. On the other hand, Dxtory with Xsplit would be a better combo due to the XSplit features. Hmm... money.

I...am torn. On the one hand, I can't fault them wanting money for their product (although I'd like to see them iron some of the bugs out).
On the other hand, it kind of screws casual casters like myself out of using it ever again.
edit: Well maybe not if you have disposable income. But I don't have the kind of disposable income where I can buy something I use so infrequently, which means unless something changes in how often I stream things my streaming days are probably done.
