In all seriousness, I'm resigned to updating Baldur's Gate 1 to the Baldur's Gate 2 engine before finally embarking on my quest to play the series in its entirety. I have never done so. In fact, I've never gotten very far despite owning the game since it came out.
I'd like a mostly vanilla experience (graphics and engine notwithstanding) and I am currently more familiar with the EasyTutu installation process than any other series of mods, but now that I'm reading about all my options, I'm very much torn between EasyTutu and Baldur's Gate Trilogy.
My understanding is that BGT turns the game into one continuous product that does not require you to import your character (it happens automatically - BG2 integrates into BG1) and some of your NPCs also retain their stats.
While that is clearly not vanilla Baldur's Gate behavior, that does intrigue me. For some reason I mistakenly thought that EasyTutu did this - combine the two games into one package.
Anyway, I have disc versions of the whole series and addons, but more recently I purchased the GoG versions of the entire series so I'll be using that as a base here. I've read that all these different mod packs are compatible with the GoG versions of the game, but I'm not really sure which my best bet is. As this is my first time through the series (and considering how long the games are, will probably be my ONLY time through the series), I'd like the best experience while remaining as faithful to the original vision of the game as possible.
Does Baldur's Gate Trilogy diverge too far from that? Any opinions or recommendations?

Personally, I also like to stick to the 'vanilla' offering, and so I'd vouch for Tutu.
The main difference, is you will have access to the different and cooler class choices that were available in BG2. So you could play a monk from level 1 all the way to 20 (Note: Monks suck at low level. Heads up). While this part may not be considered "pure vanilla experience" it does not break the game too much.
Honestly, don't worry about what might or might not get changed, and worry about you having the endurance to get through these monsters. I have the same thing sitting on my desktop (I am getting near the end of BG1) and I don't know if I got the fortitude to fully finish it. Despite the fact that I never finished throne of bhaal and that is the part i wanna see.

The pantaloons aren't even essential because if you craft the special armour from it you will be completely breaking the game with a very OP item.
Dude, it's Baldur's Gate; breaking the game is how you progress. :P
In BGT, after you kill the big bad, you get the cutscene, but then you're given control of the game again. You go back to your contact, inform him of what happened or whatever, and then he says you need to go to Amn. You then get a cutscene of you and your party getting ambushed by assassins (which is how you got put in the dungeon), then you pass out and wake up right where BG2 starts.
It's been a while, but I think the installation of BGT involves installing BG1, installing BG2, then running the BGT installer, then installing any other mods you want. I didn't have any problems at all. Here is the mods I used and the order I installed them (I renamed the files with a number at the front just so I could easily do it next time):

I'm pretty sure there's an order list somewhere in the BGT documentation because you do have to be careful with it.
