If I had a nickel for every time I've seen one of these threads I'd have several nickels. However I now find myself in this sticky predicament! So my fiance is the type of girl who would roll her eyes at the the mention of the words 'video game'. I've somehow got her into Castle crashers and she loved it. She just beat Monkey Island but I had to feed her answers from beginning to end; as she gets frusterated easily. So now I'm in desperate need to find something else that we can both play. I only have a 360, she seems to like things simple, competition type gameplay would be no good, her attention span towards gaming is still very low and shed loose all focus if she can't win Gonna start her off slow 8-)

is a Wii budgetable?
My fiancee doesn't mind videogames, in fact she quites likes them, shes currently playing through Twilight Princess, but quite often we play Wii Sports/Sports Resort and Mario Kart together. The Wii seems to have more such games.
http://www.co-optimus.com/ has a filterable list that can help you find exactly what you're looking for on whatever systems you have. I use it since I loves me some co-op.

I recommend them every time a thread like this pops up, but look at the LEGO catalog, pick out her favorite franchise they've covered out of Star Wars, Indiana Jones, Batman, Harry Potter, and Pirates of the Caribbean, and go from there. I am pretty sure I listed them (roughly) in order of release so if you're looking for lower cost of entry I would go for LEGO Star Wars before PotC.
The Lego games are all co-op gold. The " buy a Wii" suggestion Is actually a good one. They're pretty cheap consoles, probably the same price as a brand new console game. About £60 used here in the UK and the games are just downright fun for co-op.
If your girlfriend ends up wanting to try out a shooter, the following all do couch coop (and are available on 360).
Borderlands
Halo 3
Halo Reach
Gears of War
Gears of War 2
My wife's favorite out of that list so far seems to be Borderlands because you don't die all in one shot - you have a chance to catch a second wind by killing an enemy or your coop buddy can revive you. Gears and Gears 2 also have buddy revive, but they split you up often enough that it might get frustrating.
Awesome entry games into gaming in general, not centred around shooting, reflex requirements are low, most of the gameplay's low risk, and it's genuinely funny, not just "funny for a game".
The sequel has a full coop campaign, including split-screen on the 360.
My wife and I both preferred Fable II over Fable III, but I suppose it's nice that you can play your own character in someone else's game as opposed to a generic 'toon with similar stats.
Marvel Ultimate Alliance is locally co-operative and sort of similar to Castle Crashers in that it's an action rpg. I don't like it as much as I liked X-Men Legends or its sequel, but I can't recall if those are backwards compatible. My wife has never read a comic book, but anyone who's watched Spiderman or one of the X-Men movies can find a character they want to play easily enough.

Splosion Man on Live Arcade is supposedly quite nice
I can personally vouch for N+ (Live Arcade) but it gets quite difficult at times!
maybe Dishwasher Samurai 1 & 2? (also Live Arcade)
the Live Arcade Castlevania was pretty fun and is rather easy and not too long
me and my girl have been playing lego harry potter, and thats going well. the source material works for her, and its a pretty simple game but still fun.
also You Don't Know Jack is a quality girlfriend game, even if its not co-op per se.
Saint's Row 2 is amazing, but I don't know if it does splitscreen co-op on 360 (I assume so?).
Not sure if your gf is down with something that has a streaking minigame but this is a good way to find out if she's a keeper I'd say.
edit: My fiance really enjoyed playing Rainbow Six Vegas co-op with me and you can get that game for dirt cheap nowadays.
unfortunately, SR2 does NOT have local co-op. It IS, however, an amazing awesome game if you like arcadey-type driving (CA-RAAAZY TAXI!) and dress-up and stupid-silly stories about taking over the city. also, explosions and streaking and poo-trucks.

Also, amazingly, EDF2017 went down better than pretty much any game.
My girl calls it 'The Ant Game' :P
"Buy a Wii" is just one option. If you're willing to shop on PSN and Xbox Live, those are fantastic options too.

On the relevant side you could pick up Case Zero to see if Dead Rising 2 is her cup of tea.
Edit: Apparently supports online coop only, d'oh.
