    Any touristy things nearby that you never quite got around to doing?

    Also where are they going to, is there any sort of activities that he'd be likely to pick up over there (diving/skiing etc)? You could see if there's any place that does taster sessions in a similar vein so he's not quite going into it blind.

    Dinner can be special depending on where you go. Also, don't say goodbye or it will be. Tell them have fun, you'll keep in touch and then do that.

    This doesn't answer the question itself, but...

    Start planning your first letter now before they even go. Do it on scraps of paper you find laying around, like paper bags from a local store or something. Do a draft so you can read over it and pick it clean, then hand write carefully with a good looking pen. It'll feel good putting that much effort into it.

    Dinner can be special. Take her to her favorite place. Or if you are close friends, you probably have a hangout. Try to give her something she won't be able to get in another country.

    Care package with things from where you're both from but couldn't get in Japan would be a nice gesture.
