OK, I very recently met a girl and we both think we are crazy awesome. Sadly, I work 1st shift and she works 2nd. I have weekends of, she has Tues and Wednesdays off. This means we can only see each other between. Midnight and 7am. Any ideas on where to go on dates? We can really hang out at dennies and iron skillets for so long as everything else is closed.
That's a bummer. You can always meet her for a drink after work if you want to go out. Going bowling or similar might work as well, if you have any of those that are open late. Other than that, you guys might have to make your own fun. Cook dinner after she gets off, watch a movie, go to a public park and hang out, things like that.
So we get stiff once in a while. So we have a little fun. What’s wrong with that? This is a free country, isn’t it? I can take my panda any place I want to. And if I wanna buy it a drink, that’s my business.

Just a little update guys, my apartment is officially "in rotation" now. Last night we went Milwaukee to try and find obscure 24 hour coffee shops. We found a burger place converted from a George Webb which wasn't exactly ideal date spot... Then we got kicked out of a public park because it was after 10. (It was 3:30am at the time.) My apartment is cool and all, but we both would like more than just chilling at my place for sexytimes. Keep in mind, my apartment is only 9 feet by 12 feet, so it's really small.

I was about to recommend Denny's but I noticed you already had it listed in the OP. Other than that I can't really think of many late night hangouts other than bars.
I'd scout around and see if you can find any laid back smaller bars that would be open (most won't be open past midnight during the weekdays though) and aside from that, what kind of TV do you two like? If you've got a DVR or Netflix it would be cool to hang out and marathon some good TV shows in the downtime.
I like the bowling alley idea. We are working on how to "shift" our schedules during our "weekends" to be more social with each other friends. It's woking out well, as it keeps us from being in the apartment... *ALL* the time now...
That's what we're doing. On my normal weekends we are heading up to Milwaukee and hitting the Gyro places and 24hr coffee shops. It was a little bouncy at first, but we gots this down now.
My favourite thing to do with girls late at night was just go for drives. It can be pretty entertaining to just drive out into the countryside on small roads and get yourself lost. If you have GPS on your phone or in your car you really have nothing to worry about. Driving and talking can be really relaxing and often gets you into 'deeper' conversations where you can learn more about each other. Something about it being night, and only having your conversation to entertain you, as well as the relaxation of it all leads to much more open dialogue.
Ladies love looking at stars. Drive out into the middle of nowhere, bring a picnic spread of whatever. Could be hot chocolate, blankets and some snacks. Could be wine, cheese and whatever.

As silly as it sounds, this isn't a bad idea. Even if it's just wandering the empty aisles looking at whatever and talking.

I live in NYC so everything is still open at that time, bit spoiled :X.
Also Walmart has BIKES. And all the employees there at 3AM are too dead inside to care if you start racing them around the store.
