Thief guy, building up as a Dex fighter. Havel's ring and a few points in End lets me be quick with the Elite Knight armour.
Cleric guy, building to a STR/FTH/VIT Tank. Also has the Elite Knight armour. Plus the Faith Sword and Dragon Shield from the valley of drakes.
Sorcerer gal, building to a INT/whatever caster. Maybe dabble in Pyromancy as well. Armour is from Blightown via the VoD path. Took me a few tries because I kept getting sniped by thost toxic blowdart guys.

And there lies my problem with Dark Souls.
I put up with the challenge because I enjoy the combat, story and atmosphere. I rarely actually enjoy the challenge, because that's not why I play games. But the creators and community seem convinced that challenge is the only reason the game is good, so people like me are left in the cold when it simply gets too hard for the amount of skill we have. And if this were the only game I have, then I might be tempted to practice one fight over and over again for hours, but it's not. Every time I die to Super Ornstein, I just think, "Man, I could be playing Guild Wars or Dragon's Dogma or Just Cause 2 or literally any one of the hundred or so games I have in my Steam library and be enjoying myself more than this."
And the satisfaction I get from beating a boss does not even come close to making up for how much time I spent dying constantly, especially since I know it's gonna get just as bad again (or likely worse) when I reach the next boss.
And for what? Why design a game that does this? So a very small percentage of gamers can feel like super-special snowflakes and denigrate the casuals?

I tried using Great Chaos Fireball on Super Ornstein, but he jumps around too much.
I'm considering just killing Ornstein first and forgetting about his armor, since Super Smoug is apparently easier to kill.
That's how i solo'ed it, just kited them around the room and nailed ornstein with all my pyromancy stuff ( which i had upgraded solely for this fight, thats how mad i was getting)
working on the DLC stuff now, oh hey whats this manticore thing gonna d- OH GOD

Do you still have the black knight sword? Im pretty sure the bosses have lightning resist, so your spear might not be the best choice. And yes go for Smoug, he doesn't get much harder when he goes super.
smough is weak to lightning, ornstein is resistant
they both take good damage from fire, ornstein moreso than smough
Are there any weapons that naturally do fire?
Or do I have to do it through upgrading?
a good option would be to upgrade a falchion or scimitar to +10 (you'd need to leave anor londo and meet up with andrei and then return, but that's not as bad as it sounds if you use the shortcut)
then bring the upgraded falchion and queelag's soul to the giant blacksmith, who will turn it into a powerful fire weapon
I got summoned by the same guy I got summoned by two other times. This time he had another phantom with him.
We were doing really well on the boss. Had Super Ornstein to half health.
Anyone wanna guess what happened next?

in the time it took to go to another room, find batteries, and put them in my controller, i had lost about 30% of my health

Super Smough is muuuuuuuuuch easier than Super Ornstein. Unless you just can't live without the leo ring or the dragonslayer spear I would definitely kill Ornstein first. Ornstein's armor is decent but it's really not worth the frustration if that's all you want out of the fight.
You might also consider trying to get some better armor together. Chainmail is decent but I think it's outclassed pretty easy by some of the other options you should have now.

I'm pretty sure I have all of the sets you can get from Blighttown, Sen's Fortress, Anor Londo and Darkroot Basin.
The problem is the chainmail is the heaviest I can wear without getting the fat roll.

Havel's ring would certainly help. Did you get the ring of favor and protection? That one raises your equip load too, and is generally fucking awesome.
Really though the best thing you can do to make that fight easier is ice Ornstein first. He is a fucker of mothers.

1. Kill Lautric to get his ring (and save the Firekeeper I guess)
2. Kill Havel to get his ring
3. Level endurance to 24 (I can wear the entire Silver Knight set, plus the weapons I need, with a medium roll with just Lautric's ring at that point)
4. Make Queelag's Furysword
5. Destroy those motherfuckers in Anor Londo
might wanna make Havel your number 1, he will be the easier fight ( and the longer one)
just stay behind him, and dont attack until he does

Or how I killed Havel on my thief
Kite him to the Undead Berg tower entrance, back off on the stairs until he starts walking back to the back door, shoot him with arrows until he starts running back to you, repeat.

The phantom I finally managed to summon after a bunch of tries was afk. Didn't do anything.

Unfortunately, the amount of times I can play with random dudes is limited, after which point I have to grind more Humanity to access "easy mode."
And even then, I can only summon someone, like, 5% of the time I try.

I have not been entirely successful.
use the pillars to your advantage, and try to focus on lautrec, he's the only one you need to kill
1. Kill Lautric to get his ring (and save the Firekeeper I guess)
2. Kill Havel to get his ring
