The Pyromancies I have are Poison Mist, Combustion, Fireball, Great Chaos Fireball, Power Within and Flash Sweat.
And while I appreciate the offer, I don't really want to do Anor Londo right now. I'm burned out on that area. I'm hoping that going back and catching up on stuff I missed will help me go back to the fight with a clear head.

I think if you do all those areas you'll level up enough so that O&S will be way easier
the fact that 98% of all summonings don't work is a major bummer though
i think i figured out how to fight the darkroot hydra
get close to it and stab the heads when they get stuck
i had it down to 3 heads, and then i fell in a hole
so i will try again tomorrow

This is a perfectly acceptable course of action. I would suggest going back to the undead asylum (starting area) or trying to clear the first area under the firelink shrine, the one with the skeletons, but only if you have a divine weapon.
Or you can farm sens fortress, if you feel comfortable there now.

Also, I just realized I probably shouldn't have joined the Chaos Servants so soon, since I'm gonna need to join the Forest Hunters, like, right now in order to buy Shiva's items (and then murder him).

i think you can actually just rejoin the chaos covenant without paying for absolution
but yeah i have so far been a chaos servant to open the izalith shortcut, then became a sunbro to get the lightning spear miracles, became a forest hunter for the 20 seconds it took me to kill shiva and his friend, and now im a darkmoon blade.
So, I'll probably start a new character, but I have no idea at all about the basics of this game. or at least what seem to be basics

If you have humanity on you, you can use it up at a bonfire to cure your undeadness and become human, by selecting Reverse Hollow while resting at one.
While human you have boosted resistances and son on. Better yet, you can summon other players or NPC helpers at certain areas to help get past bosses and such. However, while human you also
About kindling: If you are human, you can use an additional humanity to kindle a bonfire, which raises the number of estus flasks you get by 5, so your total goes up to 10, but only at that bonfire.
You can eventually learn how to kindle fires multiple times, up to 3, for a total of 20 flasks.
Be warned, though. While you're human, other human players may invade you and try to kill you. It's 100% worth that risk, though, for what you get out of being human.
Edit: Most of the humanity you get isn't usable at first. You'll get items called "humanity" in your inventory. You have to select those, and use them like items, in order to add them to your humanity counter at the upper left. We call that loose humanity. Then you can spend them at a bonfire. However if you die, you lose any loose humanity along with your souls (but can get them back if you reach your bloodstain, just like souls)
having "loose" humanity (meaning you have a number greater than 0 in the counter) gives you a boost to all your defenses and item drop rate, up to a max benefit of ten humanity
So I'm at Ando Londo, and the only way forward from here is across a lengthy (and very high) buttress, and then crossing the rafters very high up in a building.
I gotta say, being universally scared of heights is not helping me here.

Have a full health white phantom and a full health solaire for Skittles and Oreos, and the white phantom dies immediately and solaire never fucking passes through the fog.
Still manage to kill Smogh before super Ornstien kills me though.

Oh and @stilts I was having the same kind of thing going on with not being able to summon anyone in Anor Londo, but I found leveling to 50 gave me a lot more choices so I could just pick and choose people who I hadn't failed to summon before.

i broke down and farmed souls (gaping dragon) to buy the crest of artorias for the door in dark root, sprinted through, talked to alvina the cat, joined her covenant. Then I talked to Shiva and spotted his buddy, but he wouldn't sell me anything. I found that Eastern Armor and then died to the hydra four or five more times. Then I went back to the Undead Asylum.
And got the rusted iron ring, the doll and the crest shield. Poor Oscar. I also killed two black knights and got a sweet sword I can't quite one-hand yet. I need two levels in strength.

Are they really that hard? I just used a bow for most of them.

Shiva won't sell you anything in Darkroot.
You have to find him in Blighttown.
