LA County Museum of Art is always fun and right next to the La Brea Tar pits where you can see actual excavations and where a bunch of pre-historic animals died. You can go into the museum and see the bones and stuff too, but it is geared more towards kids. Amoeba Music is a great record store with everything you could possibly want or imagine and they have live shows there sometimes too. You'll have to check, but on a couple Fridays a month in Santa Monica they used to close down parts of Venice Blvd at night for the food trucks, but I'm not sure if that is still going on.
There's lots of historic places to eat around the city and if you are in to craft brews there are some great gastropubs and stuff around.

I thought Venice Beach was fun, and the boardwalk interesting. I'd also recommend taking Mulholland Drive.

I second the LACMA. Very cool complex there. The Getty is busy, try to hit it on an off day/off hour. Drive up the coast to Santa Barbara and see the mission there. Wander around that city, it's a nice change of pace.
The Getty is a must since you have a car. Also, drive up the PCH through Malibu as far as you like (Santa Cruz and the above mentioned Santa Barbara are both fantastic). For a challenge, get on the 405 at 5pm and see how long it takes for you to develop road rage and or kill yourself [don't do this]. The whole Hollywood and Tar pits schtick can be really cool the first time. Mulholland is indeed a fun drive (go at twilight/sunset and hit one of the vista overlooking town). Chinatown is pretty shabby, but I always liked it (mmm Hop Louie) and it's nearish Dodger stadium if you're into that kind of thing.
All I can think of right now, which is really just echoing the above. Spent 5 years in town and honestly had the most fun living there road tripping elsewhere: San Diego, Palm Springs, Laguna Niguel, Santa Cruz, Santa Barbara, and of course, Vegas. =0

1) Why hate valet parking? It's a lot easier than spending time trying to find parking, esp. in weho + west LA around 3rd and la brea.
2) Musems: The museum of Jurassic Technology is a lot of fun. As is LACMA. However, I have no idea what people mean by "The Getty", as there is both the Getty villa off of PCH and the Getty museum off the 405. While the Getty museum's views are nice, the collection is almost always subpar especially compared to what you can see at LACMA or the Hammer. If you haven't done Italy ever, the Getty villa is an absolutely lovely recreation of a roman villa with period art on display. It's also convenient to the beach and canyon hiking, so you can make a day of it in Malibu.
3) Plenty of good food indoors, from most expensive to cheapest: urasawa, melisse, drago, father's office (or the hudson), huckleberry, urth cafe, in-n-out.
4) Where are you from? What other big cities have you been to? What did you enjoy doing?
