The other night I bestowed upon my house-mates my fabulous Tater-tot cassarole.

Basicly you render down about a half pound of bacon, chopped rough, after a bit toss in a can of corn and let sizzle for a bit, then dump in a bag of frozen tots, and then cover with chicken stock and milk.

cover and let it simmer for a half hour or so. Come back, uncover and stir..... yu get this kind of chunky hash-brown type consistency. mix in a small amount of shredded chedder and top with more chedder.

cheap, easy, fast, filling, tastes fuck-awsome.

Yesterday I made some penne rigate pasta, and topped it with some alfredo sauce and a mix of seasoned and sauteed mushrooms, eggplant and onions.

    It was mighty fine.

The same guy who introduced me to Bi Bim Bop's favorite food is Kim Chi. He likes the stuff that takes a year to make. Real traditional stuff. I understand it can be vile from the wrong place (or even from the 'right' place) but he really likes it and I owe him at least that much.

I learned to cook from old country women. The kind that made biscuits everyday and served gravy with everything.

But yeah... my new housemates love me. Tonight I'm making beef stew and biscuits.

I prefer cooking with leftovers to having to start from scratch. I like comfort foods.
Garlic (Gaaahlick) is easily my favorite thing to add, along with basil and rosemary.

I can't imagine a world without biscuits and gravy.

Now mind you, we aren't talking the kind of gravy you put of roast or turkey.... this is milk-gravy.

sausage, milk, cornstarch, cracked pepper, salt. flour. Makes this creamy gravy that tastes like God cumming in your mouth.

    poured over buttermilk biscuits.

    so good.

    3lbs stew meat
4 large cans tomatos, drained and pureed
    1 small can tomato paste
    half gallon beef stock
1 large jar very hot salsa
    1 bag tortilla chips

combine all but the chips and simmer for about 4 hours. then grab a few handfulls of ships and crush them into the chili. Add heat to personal flavor, but that makes an awesome base for any kind of chili.
