Beginners home theater

I've recently purchased a new Samsung HDTV LCD and am trying to upgrade everything to the best possible signal. I've have many game consoles which I want to keep hooked up and upgrade the cables where possible. This means that I don't have enough component inputs on the TV to support what I want to do.

I've debated whether to get a component selector like the Psyclone, and I'm keeping that open as an option. However, I'm debating whether I should just get an A/V Receiver with multiple inputs now instead since at some point I'm probably going to get external speakers (not expecting to right now as I'm hoping not to break the bank). I'm looking at the Onkyo TX-SR604, although this does not up-convert to HDMI as the Onkyo TX-SR674 does. But is the up-converting worth it? Does it work as advertised, for those who have experience with it?

Also, I'm a newbie at the home theater setup and it's associated technology. Does HDMI only carry the video signal or does it do full video and audio? In other words, would I need separate cables to run audio along with the video or need to get the external speakers now?
